The food of Greece’s major cities is a reflection of their urban spirit: bold, layered, and constantly evolving. Athens means souvlaki at 2 AM from the same corner grill that’s been there forever, and wine bars in converted neoclassical buildings where chefs breathe new life into traditional recipes.

Thessaloniki wakes up to bougatsa from bakeries older than your grandfather, then transforms into a maze of narrow streets where every other door leads to a family-run taverna serving whatever the chef bought at the market that morning.

Both cities have that thing where you’re eating on a rooftop while discussing whether the chef’s new take on a classic might even be better than the original. The food here isn’t trying to be anything other than what it is: honest cooking shaped by whoever happens to be behind the stove, whether they’ve been doing it for fifty years or just figured out how to make their grandmother’s recipe work in a tiny neighbourhood kitchen. 🍽️
