A Rainy Winter Night at Café Gilou in Sauble Beach

There is something special about Sauble Beach in the off season. The summer crowds are gone, the shoreline is quiet, and locals get the chance to slow down and truly savour the place before the hustle of another season returns.

On a rainy winter night we visited Café Gilou at The Sands Hotel, Sauble Beach and were reminded why this restaurant continues to be one of our favourite dining experiences in Sauble Beach.

The evening began with a rich and comforting French onion soup followed by a beautifully presented smoked salmon plate. The mussels marinière, cooked in white wine with garlic, shallots, parsley, and a touch of cream, were full of flavour and impossible not to soak up with fresh bread.

The pan fried scallops with lemon butter were cooked perfectly and paired wonderfully with a crisp Sauvignon Blanc. To finish the evening we shared a decadent chocolate mousse cake with raspberry sauce.

Great food, warm hospitality, and the quiet charm of Sauble Beach in winter.

Started the day with a walk down to Mullet Bay and settled in cabana style at Kalatua Beach Restaurant for the day. The weather was absolutely perfect. A great balance of sun and shade with warm clear water that kept us in the ocean from morning right through to sunset.

It was one of those easy island days that just flows. Swim, relax, repeat. Good conversation, great views and that calm Caribbean energy all day long.

We wrapped it up back near home with dinner and pizza by the water at Sapphire Beach Club Resort, St. Maarten restaurant. Simple, beautiful and exactly how a Sint Maarten day should end.

Some places you visit while travelling stay with you long after you leave.

During our time in Costa Rica, we stepped inside a traditional oxcart workshop in Sarchí and were reminded why craftsmanship still matters. From hand painted carts and century old machinery to the wheel press where wooden segments are drawn together using techniques passed down for generations, this is living history in motion.

Sarchí is also home to the world’s largest oxcart wheel, a Guinness World Record that celebrates the pride and skill behind one of Costa Rica’s most iconic cultural symbols.

Refugio Animal de Costa Rica

A recent visit to Refugio Animal de Costa Rica was a powerful reminder of the delicate balance between nature and humanity.

Each year, the refuge cares for hundreds of animals impacted by habitat loss, illegal pet ownership, and human development. Some are rehabilitated and returned to the wild. Others find permanent sanctuary when returning home is no longer possible.
