HOSPITALITY GEMS! If you work in the industry and don’t yet have a subscription to Imbibe Magazine, what the heck are you doing with your life? Imbibe has been around for twenty years and is a great resource for all things drink-related. Plus in this day and age, we truly need to be supporting quality print media – especially when it is independent. Having said all that, Paul Clarke is the Editor-in-Chief of Imbibe and has been for quite some time. We hosted Paul in 2019 as a speaker at Toronto Cocktail Conference where he did a seminar with Ashtin Berry called Communicating Values. We most recently saw Paul at Barcelona Cocktail Fest where he sat on a panel called Building a Bar with Purpose. It was a thoughtful conversation where Paul reminded us “Be sincere and clear in your message and who you are.” Sometimes in the wildness of this life, that’s easy to forget that.

BOOZY BOOKSHELF: The Classic Cocktail Sessions by Toby Maloney and Emma Janzen

The worst part of any cocktail/bartending/hosting book is the recipes, right? It’s always the boring part. Here are some numbers next to some names of liquids. You stir it or whatever and there is your drink.

This is not the case with The Classic Cocktail Sessions by Toby Maloney and Emma Janzen*.

Instead, what we get is a thoughtful and funny introduction to how the book came to be and the purpose of this book in contrast to so many of the big deal bar books of the last decade and a half.

The Classic Cocktail Sessions revisits classic that you think you already have nailed down and asks you to explore the idea that if you shake something with slightly less ice or for a little bit longer, you will end up with a much different cocktail. There is no “right” way for a drink to taste when it hits the bar, but there is a “right” way to make that drink. That is: carefully.

This is illustrated by the care taken in explaining not just the recipe of each of these classics, but 6 or 7 detailed paragraphs about how to approach the making of each of the 61 recipes in this book. Maybe you need a bit more sweetness because lemons are out of season, or the bite of the booze is too aggressive so maybe another 3 seconds of shaking will help.

The point here is to pay close attention and show care for what you are putting in the glass, so that whoever ends up drinking that cocktail can feel the love.
