Did you know that getting a glass of beer that's half foam in Prague is actually a sign you're doing it right? 🍺

I had no idea either, until my Czech friend set me straight on my first night in the city.

Let me back up. I met him years ago when we were both studying tourism in Spain, and when he invited me to visit during spring break, I jumped at it. He's from Ostrava, and he took me on the speed train into Prague for a couple of days that genuinely changed how I see Europe. Having someone who grew up there as my guide turned what could have been a standard tourist loop into something so much more immersive.

Prague stopped me in my tracks before I even knew what hit me. The Gothic spires, the Baroque facades, the Vltava River running through it all. I visited St. Vitus Cathedral, walked through Prague Castle, and crossed Charles Bridge more than once. But seeing Charles Bridge at night was the moment that really got me. The way the lights illuminate the statues, with the river below and the atmosphere of Old Town meeting Lesser Town on either side, honestly, photographs just don't do it justice. You have to be there.

And then there was the beer. Czechia holds the title of beer capital of the world for very good reason. I loved all of the different flavours and the different colours and sampling all of the famous beers I had, fresh Pilsners poured in classic pubs, crisp and cold and nothing like what we're used to back home. That foam I mentioned? Embrace it. That's the authentic Czech experience, and it is absolutely worth leaning into.

What surprised me most is how accessible Prague actually is. Even with just one or two nights, you can experience so much. Compared to Paris or Rome, it's still a little under the radar, which means you can actually breathe, wander, and dive into the local culture without feeling swallowed by crowds. And there are plenty of free things to see along the way.

Because my friend is from Ostrava, I also got to hike near the border of Austria on a ski resort the locals use for hiking in spring and summer when the snow is gone and everything is incredibly green. That's the kind of first hand experience you simply don't get from a standard itinerary.

I now confidently recommend Czechia to anyone craving European culture without the overwhelming crowds, especially if you love history, architecture, and yes, really good beer.

For my 30th birthday, I gave myself the best gift I could think of: six countries, rainforests, ruins, and the kind of experiences you can't buy off a shelf. One of those countries was Belize, or as I like to call it, "Unbelizable." 🌊

I'd heard the stories. The ancient Mayan sites. The Caribbean waters. But as a travel advisor, I confidently sell and recommend places I've actually walked through, tasted, and felt. So I went to see it for myself.

We spent a full day at Hol Chan Marine Reserve, the oldest marine reserve in Belize, and every single one of the 18 people in our G Adventures group signed up for it. All 18. That's how excited we were. And honestly, once you're underwater surrounded by angelfish, conch shells, blue-striped grunts, schoolmaster snappers, and hundreds of other species in their natural habitat, you understand why. Then the reef sharks and turtles glided past us, completely calm, completely unbothered. It was the kind of moment that makes you feel small in the best possible way. 🐢🦈

But the moment that stayed with me longest happened on land. We visited the San Antonio Women's Pottery Cooperative, a Planeterra-supported project where women in a village where girls rarely continue past primary school have built something extraordinary together. Centuries-old Mayan pottery techniques, income, skills, community. We tried our hand at making pieces ourselves, then shared a traditional lunch from the Cayo region with these women. I left reminded that when you travel, you are a visitor in someone else's world, and embracing that fully is where the real experience lives. 🏺

And then there's Xunantunich. A 9th-century Mayan centre perched on a natural limestone ridge with views of the Mopan River and the Guatemalan countryside stretching out beyond it. El Castillo, the tallest temple, is partially excavated with a stunning stucco frieze still visible on the east side. Standing there, feeling the ancient stone beneath my feet, I understood why this is Belize's most visited site. Xunantunich is a must see while in Belize. Full stop.

I will never forget sitting in a rustic wooden hut near the Napo River, watching our Quichua hosts make us hot chocolate over an open fire, while fish cooked slowly in banana leaves beside it. That moment alone was worth the flight to Ecuador.

My partner Santi and I added eight days on G Adventures' Ecuador Quest itinerary after a trip to Colombia, because Ecuador was right there on the map and I kept saying "someday." Someday finally happened, and honestly, it changed how I think about this entire region.

We stayed with a local Quichua family in the community of Cando, deep in the Amazon. We hiked through rainforest, plunged into waterfalls, learned about tropical plant uses on forest walks, and then cycled for 40 minutes through lush Amazonian landscapes to visit the nearby Indigenous community of Shandia. What moved me most was learning that these cultural experiences are designed by the community itself, to preserve Indigenous traditions and create real opportunities for young people who might otherwise have to leave. Knowing my visit was part of that felt genuinely meaningful, not performative.

Quito surprised me too. The altitude hit harder than I expected, so here is the tip I now share with every client planning this itinerary: arrive at least two days before your tour begins. Give your body a softer landing. By day three I was ready to explore, and I'm so glad I was, because standing at the base of Cotopaxi, watching that near-perfect symmetrical snow-capped cone appear to rise straight out of the flat Andean plains, is one of those stunning moments that photos simply cannot hold.

Ecuador is so much more than a stopover on the way to the Galápagos. It is a destination in its own right, with extraordinary biodiversity, Indigenous culture, Andean drama, and Amazonian warmth that gets right under your skin. That said, if you are already planning a Galápagos trip, adding a week or two on the mainland rounds out the experience in a way you will not regret.

I now recommend mainland Ecuador with full confidence, because I have felt the altitude, tasted the food, and sat around a fire with people who welcomed me into something real. If Ecuador has been sitting quietly on your list, or if you are already dreaming about the Galápagos and wondering what else to add, I would genuinely love to help you build the itinerary.
