Calçots season is officially here in Catalonia.
From January to March, this region celebrates one of its most loved traditions: the calçotada. Long, sweet green onions are grilled over open flames until perfectly charred, then wrapped in newspaper to stay warm. They’re peeled by hand, dipped generously into romesco sauce, and eaten standing up, usually with friends, wine, and plenty of laughter.
It’s more than food - it’s a social ritual that brings people together in the countryside, at family homes, and in local restaurants. If you’re visiting Catalonia during winter, experiencing a calçotada is a must. Just remember: wear a bib, don’t worry about getting messy, and enjoy every bite.
