🍷🦐 Wine enthusiasts! Today we're bringing the Spanish seaside to your table with a match made in heaven: crisp Verdejo paired with classic Spanish garlic prawns.
Verdejo from the Rueda region (Valladolid), with its refreshing citrus notes, subtle fennel hints and mineral backbone, creates a perfect harmony with the sweet flesh of garlic-infused prawns. This pairing showcases how Spanish coastal and inland traditions come together beautifully.
Here is our take on this Garlic Prawns recipe:
🍤500g large prawns, peeled (tails left on)
🧄6 cloves garlic, finely sliced
🌶1 dried chili, crumbled
🫒60ml extra virgin olive oil
☘️2 tbsp fresh parsley, chopped
🧂Sea salt
🍋Lemon wedges to serve
Heat olive oil in a pan, add garlic and chili and cook until fragrant. Add prawns, cook 2-3 minutes until pink, finish with parsley and salt. Serve immediately with lemon wedges and chilled Verdejo.
The wine's crisp acidity cuts through the richness of the olive oil while its herbaceous character complements the garlic and parsley beautifully.
