Tonight’s Special: Skate Wing – flying out (not literally) 🪽
Roasted in noisette butter until just cooked — leaving the flesh flaky, moist, and full of flavour. While it rests, we build a sauce from the pan juices with dry-cured bacon, Lilliput capers, a hit of lime juice, and fresh parsley.
We finish it off with vibrant samphire and dress the fish simply — respecting the delicacy of this beautiful ingredient.
