📣 LAST MARATHON ALERT (for a while!) 📣

Fresh off a PB at Brighton, I'm lacing up one more time for the Leeds Marathon - but this one's special.

After seeing the incredible work Leeds Hospital did for Rob Burrow and the MND community, I couldn't pass up the chance to give back. This isn't just another race for me; it's about supporting the heroes in scrubs who make miracles happen every day.

I'll be treating this as a celebration run - my two boys and family will be cheering me on from the sidelines! While I'm excited to focus on growing my PT and online coaching business after this, I'm pouring my heart into this final marathon (for now).

Homemade Chinese Fakeaway 🍜🔥

Ditch the takeaway and make this at home—so much tastier, healthier, and packed with flavor! This Chinese-inspired feast was a hit, and the noodle sauce is a game-changer:

🥢 Noodle Sauce:

✅ 3 tbsp soy sauce (low-sodium if preferred)

✅ 2 tbsp hoisin sauce (adds sweetness—great for kids!)

✅ 1 tbsp sesame oil

✅ 1 tbsp honey or brown sugar

✅ 1 tbsp rice vinegar (adjust if kids prefer less tang)

✅ 1 small garlic clove, finely minced

Served with:

Low-Calorie Dairy-Free Mint Chocolate Brownie Ice Cream Recipe

Craving a delicious, guilt-free treat? This low-calorie, dairy-free mint chocolate brownie ice cream hits the spot! Packed with rich chocolate flavor and refreshing mint, it's perfect for anyone looking to indulge without overdoing it. Here's how to make it:

Ingredients:

60g oat flour

30g cocoa powder

1-2 tbsp brownie powder

1/2 large egg (or 1 small egg)

30g crushed mint/peppermint chocolate

100ml plant-based milk

30g soya yogurt

20g baking sweetener

1/2 tsp baking powder

Pinch of salt

1/2 tsp vanilla extract

Instructions:

1. Mix the Batter: In a bowl, combine the oat flour, cocoa powder, brownie powder, baking powder, sweetener, and salt. Stir to blend the dry ingredients evenly.

2. Add Wet Ingredients: Mix in the egg, plant-based milk, soya yogurt, and vanilla extract until you get a smooth batter.
