Mushroomstuff We are Bill O'Dea and Freda O'Dea. We do wild mushroom hunts with the option of cooking your catch in the forest.

Bill O’Dea is a passionate Irish mycophagist who has been running mushroom hunts in Ireland and abroad since 1996. He also speaks internationally at Mushroom festivals in Spain, France and Turkey. His hunts in Ireland have been covered and recommended by RTE TV(Corrigan knows food, Nationwide,Living the Wildlife, Neven Maguire), TV3, TG4, Irish Times, Irish Independent, Examiner, Sunday Independen

t,RTE 1 Radio(Morning Ireland, Mooney goes wild, ), Sunday Business Post(Ross Golden Bannon top ten events of the year), Food and Wine magazine, and others. As well as his love of gathering and eating wild mushrooms, Bill enjoys sharing his knowledge on the fascinating, amusing and sometimes horrific aspects of fungi and their relationship to the planet and the other natural kingdoms. Bill runs several public mushroom hunts in Autumn every year and is also available for private events. He has enjoyed sharing his passion with groups including chefs, university/college, slow food and mushroom/food festivals.

Its a bonus to get a lobster and a crab when im down for a swim. Thanks Steve. 30 mins in freezer and quick knife through head to dispatch before a 15 minute boil. I use everything except the feathery gills. Particularly love the tasty brown meat from the Crab and the head butter and roe from the Lobster.
I roasted all the shells and made a delicous bisque.
Crab and Lobster on soda bread with homemade mayonnaise and a squeeze of lemon. Under the watchful eye of Foosa.

More plumming. This time I went for making prunes in syrup but I gave up when I saw all the beautiful juice coming from the plums during the drying. The oven temperature was too high. So I poured the juice into a saucepan and added the plums along with some sugar(half cup) and a little water(cup). Brought to just under boiling point and then added to my sterilised jar.
The taste is amazing. Holding some sourness. Kind of sherbetty.
I'll keep in the fridge but I expect that it will slowly ferment over time which will make the flavours even more interesting.
Still more plums on the tree. Probably chutney due next.

And next I've made some Chinese plum sauce. About a half litre of absolute deliciousness. Should do me for a year or more I the fridge. Will be adding to stir-fry and crispy Duck pancakes. Could be used as ketchup on anything. Lots of plums, sugar, vinegar, ginger, cardamom, nutmeg, chilli. Simmered with a little water. Everything passed through a sieve and squeezed through to get all the pulp. It's quite thick but more runny than I'd prefer. Absolutely delicious.

Cherry plums from our garden, ripened in the Sun. Lots of options starting with a clafoutis which was delicous with a bit of sourness kept by using less sugar.
Probably do chutney and jam tomorrow.
