A wonderful lunch featuring Uttar Andhra cuisine was the highlight of my last trip to Hyderabad. Hosted by the ever charming Kalyanam at The Culinary Lounge, this simple heartwarming cuisine totally soothed me.

Uttar Andhra (North Coastal Andhra) cuisine, from the districts of Srikakulam, Vizianagaram and Visakhapatnam, has a distinct flavor compared to the rest of Andhra Pradesh. It leans towards mild spiciness, tangy flavors, and coconut-based dishes. A signature feature is the use of poppy seeds, tamarind, and jaggery, giving curries a subtle sweet-sour balance.

Popular highlights include:
โ€ข Cashew Curry
โ€ขJunugulu
โ€ข
โ€ข Madugula Halwa (ghee-rich sweet made with wheat milk)
โ€ข Bobbattu (sweet flatbread with lentil filling)
โ€ข Pesarattu & Upma (green gram dosa)

Unlike the fiery Rayalaseema or the spice-heavy Telangana food, Uttar Andhra meals are lighter, coastal, and home-style, often served with generous amounts of ghee and steaming hot rice.

Tales of Arabia, Chef Pin pop-up at Tansen Hyderabad is all set to dazzle the people of Hyderabad with Nikhath Khanโ€™s exemplary food from Arab and Levant region.

You can have a pick of delectable dishes, flavours of Middle East in the exquisite, ambient setting of Tansen. This A La Carte menu will be available for dinner from 18th-20th of July at Tansen.

Dishes ranging from Soups such as a creamy Butter nut squash soup with goat cheese and harrisa oil to Harissa n lamb soup
Appetizers include
Ali nazik shrimps
Dill roasted served on muttabal while vegetarians can relish Felafel bowls served with pita bread and Baba ghanouj with fried eggplant and nuts.

Arabic kebabs are especially worth trying with their subtle flavours- Syrian cherry lamb, Turkiye Chicken shish kebab, Egyptian kofta kebab.
Mains include Yemeni Fahassa served with hulba and Manti lamb turkiye.

Tajine vegetable cooked in orange sauce is a sumptuous veg dish.

You can round off the meal with the robust Lamb kabsa.

For Dessert there is
Aish e saraya
Toasted arabic bread soaked in cream n cheese sauce.
