Udupi in the coastal area of Karnataka and the heart of Tulu Culture is home to unique recipes.
One such is the 'Moode' or 'Moodey'. Its a cylindrical portion steamed in Screw Pine / Jackfruit leaves, which are rolled and filled with idli batter.
The fragrance of the leaves flows in the idlis while steaming and emanates a mild flavour.
Traditionally served with Brahmi Chutney / Ondelaga Chutney and Huli saaru, the Moode melts in the mouth, bursting with the flavours of Udupi Saaru and Brahmi leaves.
Not an easy dish to find in the restaurants, few homestays cooks might prepare it for you, if you ask them lovingly, just like me !
