It has been made in Inuyama since 1597 — a Japanese medicinal liqueur of honeysuckle steeped with rice. Not sake. For four centuries, the recipe was never written down; it passed from one person to the next, once a generation.

On September 26, Nindōshu Taiken launches. Taste it, seal your own bottles by hand, and make two. One comes home with you. One stays in the cellar for at least two years.

Something new is coming to Inuyama.

Nindōshu has been made in one house there since 1597 — a medicinal liqueur of Japanese honeysuckle steeped with rice. Not sake. For four centuries the recipe was passed down by word of mouth, from one person to the next. Never written down.

On September 26, a new way to experience it begins.

A brewery in Inuyama has made the same drink since 1597, and almost nobody outside Aichi has heard of it.

Nindōshu isn't sake. It's a medicinal liqueur — Japanese honeysuckle steeped with rice, the sweetness coming from the rice itself. 忍冬 means enduring winter, after a plant that keeps its leaves through the cold.

It was the drink the lords of Inuyama Castle sent up to the sh**un. A domain ledger from 1837 records this house working 1,350 koku of rice, the largest in town. It was once made in Hamamatsu and in Kishū too — both those lines ended.

And in four hundred years the recipe has never been written down. One child per generation is told, by word of mouth, and that is the whole record.

There's a brewery in Inuyama that has made one drink, the same way, since 1597.

You won't spot it from the road. Ceramic vessels sunk into the floor, a cast-iron hand press still in daily use, tools older than the tanks beside them.

Visit with us and you leave with two bottles. One comes home the same day. The second stays behind — sealed and labelled by your own hand — to age in the cellar for at least two years.

Eight years ago today, Honey J Corporation was registered in Nagoya. Here's what that registration actually means.

Japan licenses travel agencies in tiers. Class 1 is the highest — registered nationally with the Japan Tourism Agency rather than a prefectural office, requiring a minimum of ¥30 million in base assets plus a security bond held to protect travellers' money, and renewed every five years. It's the only tier permitted to plan and sell overseas package tours.

Most first-time Kyoto trips make the same three mistakes, and nobody tells you beforehand.
