Harvesting Kitul sap in the central highlands of Sri Lanka.

Kitul sap is a natural sweetener, native to Sri Lanka and South India. It is harvested from the flowers of Kitul palms / fishtail palms. ( Caryota urens)

Caryota urens is a species of flowering plant in the palm family, native to Sri Lanka, India, Myanmar and Malaysia.

Local farmers still use an ancient technique (rituals) to harvest Kitul sap. The village astrologer gives the exact time and the luckiest side to climb the bamboo ladder attached to the palm tree.

According to each family's unique secret recipe, they prepare a special mixture of lemon, pepper, salt, chili powder and many other medicinal plants. They insert the first secret mixture into the young stem of the giant flower and another secret mixture consisting of firewood ashes, water and salt to use just before the very first sap harvest.
A very popular and delicious local dessert, called curd (Kiri) in English, made from buffalo milk and also considered a local yogurt, is always eaten with Kitul (Pani) molasses.
