Toddy is a fermented drink made from coconut syrup and palm sugar, often garnished with unique ingredients like onions and chillies. With a bit more effort, toddy can be distilled into a stronger, rum-like drink called arrack, or further fermented to create vinegar.

Tapping coconut trees for their milky white sap is a serious craft. Expert toddy tappers scale towering coconut trees to collect the milky sap straight from the source. The fresh sap then ferments naturally, transforming into one of Sri Lanka’s signature drinks.
