mplacent, sedentary and stuck in a routine--it takes less energy and thought and, frankly, can be comfortable. Everything unknown to me is exciting and I can't help but pass that energy along to others who may not know what beautiful places and experiences are waiting for them. I hope they open their minds, to allow more love, acceptance and wonder to enter in. I want the glory of these unique places and people to humble self-righteousness, close-mindedness and fear, that each guest may let go of any personal strain or stress and fully absorb the love reflected in each moment--a carefully prepared pot of tea, a smiling welcome from the guest house owner, a glorious sunset. I wish for all my guests is to reflect on their journey--on these experiences and people and consider how they themselves might positively change their lives. Once our eyes are opened, we can open our minds to accept new ideas, imagine what could have never occurred to us before, think in ways we never thought before and develop new concepts of health, wealth, beauty, family, community and ourselves. Learning how other people live, build, communicate, work, eat, love, means we no longer accept just one singular "right" way. Through meeting and interacting with others, we often encounter solutions or situations that make us re-think how we act at home. Last of all, we should have more consideration for and understanding of a different culture, which then inspires us to explore further.

Winter Highlights

Spending the holidays without family is hard. The real joy of holidays is gathering so, no matter how many presents there are or how much good food, it feels meaningless with friends and family.

Cooking holiday dishes was a struggle for me this year. I couldn’t get my heart into the foods I’m used to preparing alongside my mother, sister, grandma, cousins, laughing and wheezing in between as one of the self-proclaimed barista men in the family makes us special coffees.

With family we do things together like take a walk, go see a movie the day after Christmas, or play board games to raucous jokes and laughter.

Without family we look for little ways to make it special—take a little road trip to Marrakech, go ice skating at the mall, drink specialty coffee we can’t get in Essaouira, eat sushi for Christmas Eve, take beach walks at sunset.

It’s winter in Morocco and we are grateful for the rain!

The movement and power in the waves and clouds is mesmerizing and certainly add to the enchantment of Essaouira.

Light is especially golden and dramatic and views are crisp and clean revealing hills and mountain scales often forgotten in the heat and haze of summer.

Have you ever made mole?

I never got the courage to do it until I found myself with many ingredients on hand and a craving for something different.

Many people know it as ā€œthe dish with chocolate in itā€, which this does indeed have, but there are many different types of this comforting sauce and many delicious elements hidden within.

I sometimes refer to mole as ā€œMexican curryā€, implying that it is thick and warming and made of many different spices and more. I put 20 different things into this sauce, from nuts and seeds to chiles, spices and aromatics.

Although most of the specific chiles are not readily available in Morocco, everything else is and this sauce is so flexible it’s easy to get creative and still come out with a delicious dish and a semblance of Mexican flavor.

I used the sauce with leftover shredded turkey and also saved out a jar for a future dish. I kind of just want to scoop it up with some hot tortillas….

It’s got:
Toasted sesame seeds
Roasted peanuts
Grilled dried Chiles
Grilled pepper and onion
Garlic
Cinnamon
Star anise
Paprika
Salt
Toasted croutons
Crushed Tomatoes
Prunes
Toasted pumpkin seeds
Dark chocolate
Oregano

And I don’t remember what elseā€¦šŸ˜„

🦃 There are two types of turkeys available (live only from a special butcher)—traditional country and modern. The first is smaller and gamier, the second is huge. This one was 25 lbs. Small compared to the 50-pounder we (unknowingly) purchased two years ago. It took 7 hours to cook.

Pro-tip: Roast your Turkey breast-down for a natural basting process and juicer white meat!

šŸ„” Sweet potatoes are usually the white inside variety, which aren’t as sweet and creamy as the orange ones. I magically purchased a whole bag of orange ones (with one sneaky white one) and now I cannot find any more.

šŸ§‚There is no ā€œpumpkin pie spiceā€ on the market. You will have to buy your spices while and grind them.

Pro tip—grind cloves in quick pulses or the heat will make them terribly bitter and inedible!

šŸ§€ Cheese is expensive, including cream cheese. Look for the big bucket by Le Berger if you need to make a cheesecake.

5 MUST-TRY FOODS IN MOROCCO

You’ve heard of couscous and tagine.

You probably think couscous is a little yellow grain that cooks in five minutes in boiling water.

Well, it’s actually the name of Morocco’s Friday special meal, cooked with love over several hours. It involves flavoring and slow-cooking meat in a pot, preparing and pacing the addition of vegetables to cook to the perfect texture and alternately steaming and ā€œmassagingā€ small ā€œgrainsā€ of semolina flour pasta in olive oil until they are perfectly flavored and fluffy.

Moroccan cuisine is no joke.

Preparation, texture, presentation and flavor are all carefully considered and should never be compromised!

BEST TIME TO VISIT MOROCCO

Found this chart on and I love it! It’s pretty much perfect except that I would shift the ā€œperfect timeā€ for visiting Marrakech and Essaouira into October-December.

Of course, it depends on where you’re coming from, too. Most people from Europe are coming to escape the cold and therefore don’t want to meet cold and rain but winter light and colors here are beautiful in the south!

So, now you know when to come, when are you coming??
