Carne en su Jugo is a traditional, brothy Mexican beef stew originating from Guadalajara in the state of Jalisco. Translating to "meat in its juices", it features finely chopped beef steak and bacon simmered in a flavourful broth made from a blend of boiled tomatillos, garlic, onion, and cilantro, then mixed with meat juices like beef drippings and bacon fat. The dish is usually served with whole pinto beans and corn tortillas, as well as all the usual fresh garnish fixings of Mexican food. The famous restaurant Karne Garibaldi in Guadalajara has made this local dish world-renowned, famously known for holding the Guinness World Record for the fastest food service in the world, serving a full meal of this Carne en su Jugo in just 13.5 seconds! 🤯
