如果要用一道料理認識寮國,我會選 Jeow(แจ่ว)。
很多人以為 Jeow 只是辣椒醬,但走進寮國後才發現,它其實是一種生活文化。幾乎每一個家庭,都有屬於自己的 Jeow。
同樣叫 Jeow,卻沒有兩種味道完全一樣。因為它記錄的不只是食譜,更是一個家庭、一片土地、一種生活方式。
這次 《Foodish Trip 人間味》,我們沒有直接介紹 Jeow。而是設計了一場味覺體驗。我們準備了 8 種不同的 Jeow,請大家一邊品嚐,一邊猜:這一種 Jeow,是誰做的?
答案分成四個身分:
Royal(王室)
High Society(上流社會)
Village(農村百姓)
Hill Tribe(山地民族)
大家猜得不亦樂乎。有人覺得越精緻越像皇家;有人反而最喜歡農村家庭最樸實的味道。直到答案揭曉,大家才明白:原來味道,也能反映一個社會。
皇家 Jeow 講究細膩與平衡;上流社會多了精緻工藝;農村家庭展現最純粹的風土;山地民族則充滿森林、煙燻與野生香草的氣息。
沒有誰比較高級。只是不同生活,孕育出不同的味道。那一刻,我們明白,Jeow 從來不只是一種醬。它是一個家庭的記憶,也是一個民族的文化。
這就是 《Foodish Trip 人間味》 想帶大家體驗的旅行。我們不是吃 8 種 Jeow,而是透過 8 種味道,認識寮國不同的文化與生活。

Many people think Jeow is simply a chilli dip. But once you travel through Laos, you realise it is much more than that—it is part of the country's way of life.
Almost every family has its own Jeow recipe. They all share the same name, yet no two taste exactly alike.
Because Jeow carries more than ingredients. It reflects a family's heritage, the character of the land, and a way of living.
During this Foodish Trip, we didn't simply introduce Jeow. Instead, we created a tasting experience.
Our guests sampled eight different types of Jeow, and with every taste, they were asked one question: "Who do you think made this Jeow?"
The answers belonged to four different social backgrounds:
Royal
High Society
Village
Hill Tribe
The discussions quickly became lively.
Some believed the more refined flavours must belong to the Royal family, while others were most touched by the honest simplicity of the Village recipes.
When the answers were finally revealed, everyone realised something fascinating: Flavour can tell the story of a society.
Royal Jeow is elegant and perfectly balanced.
High Society Jeow reflects refinement and craftsmanship.
Village Jeow celebrates the purity of local ingredients.
Hill Tribe Jeow carries the aromas of forest herbs, smoke and wild mountain traditions.
None is better than another. They simply represent different ways of life.
At that moment, we understood that Jeow is far more than a dipping sauce.
It is family memory.
It is cultural heritage.
It is the story of a people, preserved through flavour.
This is the kind of journey Foodish Trip hopes to create.
We were not simply tasting eight types of Jeow.
We were discovering the many cultures, communities and traditions of Laos through eight distinct flavours.
