How to make Asin Tibuok?
Tradtional Philippine salt, is made through a labor-intensive, months-long process involving coconut husks, seawater, and fire. The process begins with soaking coconut husks in seawater for extended periods, then drying and burning them to ash. The ash is then used to filter seawater, producing a concentrated brine that is boiled in clay pots until it solidifies into the distinctive “dinosaur egg” shape.
Here’s a more detailed breakdown of the process:
1. Soaking and Drying:
Coconut husks are submerged in seawater, typically in specially dug pits, for several months.
The husks absorb minerals from the seawater.
After soaking, the husks are removed, chopped into smaller pieces, and sun-dried.
Crucially, the husks must be protected from rain during drying to prevent the salt from washing away.
2. Burning and Filtering:
The dried husks are burned slowly over a period of days, using specific types of hardwood like Ipil-Ipil and Duhat.
The resulting ash, known as “gasang,” is collected.
The gasang is placed in a bamboo filtering device, and seawater is poured through it.
This process extracts the salt from the ash, creating a concentrated brine called “tasik”.
3. Boiling and Solidifying:
The tasik is poured into specially made clay pots.
The pots are placed in a furnace and heated for several hours.
As the liquid evaporates, the salt solidifies, eventually filling the pot and taking on the characteristic dome shape.
The pots are replenished with tasik as the liquid evaporates, and when the pot cracks due to the heat, the Asin Tibuok is ready.
