This week I am putting a new beer together for a good client. We are brewing an IPA, but using one of the Kveik strains from some farm breweries in Norway. (These yeasts have a fascinating history.) So I actually went to Norway last week and was able to learn first hand about these really incredible yeasts. And I learned a little Norwegian just so I can whisper to it.
