* Spinach and Feta Scramble *
Ingredients:
3 large eggs (or 2 eggs + 2 egg whites for lower fat)
1 cup fresh spinach leaves
1/4 cup feta cheese, crumbled
1/4 cup cherry tomatoes, halved
1/4 avocado, diced (optional)
Salt and pepper to taste
1 teaspoon olive oil or cooking spray
Instructions:
Prep: Wash the spinach and tomatoes. Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until fully combined.
Cook Spinach: Heat the olive oil (or spray) in a non-stick skillet over medium heat. Add the spinach and cook until it wilts, about 1-2 minutes.
Add Eggs: Pour the eggs into the skillet with the spinach. Let them sit for a few seconds, then start gently stirring with a spatula, allowing the eggs to cook slowly.
Add Feta & Tomatoes: When the eggs are almost fully cooked but still slightly runny, add the crumbled feta cheese and cherry tomatoes. Continue to cook until the eggs are fully set and the cheese is slightly melted.
Serve: Remove from heat and top with diced avocado if using. Serve immediately with a slice of whole-grain toast or a side of fruit.
