🍌 Banana Cupcakes with Cream Cheese Frosting 🍰
Ingredients:
1½ cups mashed ripe bananas (about 3 bananas)
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup packed brown sugar
2 large eggs, at room temperature
¼ cup sour cream or plain yogurt, at room temperature
2 teaspoons vanilla extract
½ cup buttermilk, at room temperature
For the Cream Cheese Frosting:
8 ounces cream cheese, softened
½ cup unsalted butter, softened
3 cups confectioners' sugar
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
Instructions:
Preheat your oven to 350°F (177°C) and line a cupcake pan with liners.
In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
In a large bowl, beat the butter, granulated sugar, and brown sugar together until creamy.
Add the eggs one at a time, beating well after each addition.
Mix in the mashed bananas, sour cream, and vanilla extract until combined.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely before frosting.
For the frosting, beat the cream cheese and butter together until smooth. Add the confectioners' sugar, vanilla extract, and cinnamon, and beat until creamy.
