Without question, one of the easiest to recognize "choice" mushrooms. Sparassis Spathulata or more commonly called Cauliflower mushroom can get 30cm or more in width. Only her brother looks somewhat similar and is eatable as well. Sautéed with butter, olive oil, salt and pepper until crispy and delicious. Serve with everything from buttery scrambled eggs, rare steak, garden salad or just as a side with shaved Parmesan.
