Happy Aloha Friday!

Any decent bar, from a home bar all the way to a cocktail bar, should always have ingredients for at least one good nightcap cocktail.

The Alexander, which precedes this drink, is gin based but, nevertheless, is still a wonderful drink. Brandy, however, makes for a much better nightcap when paired with a high quality crème de cacao. Use a great Cognac and you have yourself a perfect drink to close out your evening.

BRANDY ALEXANDER
- Hardy XO
- Tempus Fugit Crème de Cacao
- Heavy cream
- fresh nutmeg for garnish

P.S. Cognac is to brandy what Champagne is to sparkling wine, and the pyramid goes: brandy

I may be partial to the Old Fashioned and Manhattan, but there is one drink that is more significant to me than any other drink.

This is special because it represents the same New York borough where I met my wife. It’s also noteworthy that Amer Picon is not available in the US, let alone Hawaii, which makes having an authentic cocktail, true to ingredients, that much more meaningful.

Oh, and this drink is REALLY good! 😉

THE BROOKLYN
- Rye whiskey
- Dry vermouth
- Maraschino
- Amer Picon
- Boker’s bitters

By far my favorite modern classic. I usually go with Johnnie Walker Double Black and Laphroaig 10, but when I want to lavishly indulge in a libation, I go with a much higher quality blended scotch.

PENICILLIN
- Johnnie Walker Blue Label Brora & Rare
- Ginger juice
- Honey
- Lemon juice
- Ardbeg 10
- Sweet ginger for garnish

The regular Blue Label will work, but I love Brora & Rare’s earthy notes and the faint scent of petrichor. The Port Ellen also makes an amazing concoction. I use Ardbeg 10 in place of Laphroaig 10 just because it complements the Brora & Rare so much better. I also prefer using fresh ginger juice compared to fresh ginger syrup for a more robust flavor profile without the extra sweetness. I also like to use sweetened ginger instead of candied ginger.

I just realized that I have made a Negroni at least four times a week for the past two weeks. You may even say that for this month, the Negroni and all of its variations, have supplanted my fixation for the Old Fashioned and all of its iterations.

The Negroni is fascinating because it’s an apéritif that can also be enjoyed as a nightcap. For example, the original Negroni and Negroni Sbagliato are wonderful pre dinner drink. Add a premium coffee liqueur or crème de cacao, however, and you have yourself a cold brew or chocolate Negroni, which make for a spectacular nightcap.

- Hendrick’s Midsummer Solstice
- Campari
- Sweet Vermouth
- Royal Combier
- Seville Orange bitters

You may replace the gin with more triple sec for a much lighter drink.
