The best way to start a day in Bismarck? By eating a breakfast skillet at Kroll's Diner! This iconic restaurant has one of the best breakfasts in the USA and has been featured in the Food Network Magazine. .
They are a 50s style restaurant, popular for their German food including knoephla soup and fleischkuekle, a deep fried meat pie. .
My Cajun breakfast skillet was loaded with hash browns, eggs, sausages, green pepper, and cheese. It came with both pancakes and french toast - delicious ❤️.

This summer has been pretty hectic! After our spring road trip to California in April, we traveled to New York, Chicago, New Orleans, and San Antonio over the past three months - all with a 10-month-old baby girl. Now the kids are back in daycare and we finally have the time to update a slew of destinations on the blog, starting with New York!

February has been so good to us. From the crazy schedule of being a new mom to 4 days of complete fun and relaxation with the love of my life, it has been such a great month. For our Valentine’s Day trip, we went to Estes Park. We got cheap tickets on Frontier to Denver (score!) and then Visit Estes Park graciously agreed to host us during our stay. ⁣⁣⁣⁣⁣⁣⁣⁣
Estes Park and its surroundings are so beautiful that it’s hard to pick the favorite part of our trip. We were treated to amazing views while on our way to Estes Park and then the peaks of the Continental Divide loomed in front of us as we drove Bear Lake Road in Rocky Mountains National Park.⁣⁣⁣⁣⁣⁣⁣⁣
We saw deer grazing by Lake Estes and had to stop for an elk crossing the road...which is completely normal in Estes Park! We had the time of our lives on icy trails, snowy slopes, and frozen lakes. Somehow, I had never imagined that Rocky Mountain National Park and Estes Park in winter will be so much fun! And now, I can see us returning year after year with the kids in tow! ⁣⁣⁣⁣⁣⁣⁣⁣
