These festive bites are a holiday must! A mix of peanut butter, Rice Krispies, and pecans, dipped in rich chocolate and topped with holiday sprinkles. So easy and delicious!

🎄 Christmas Chocolate Rice Krispie Balls 🍫

Ingredients:
• ½ cup peanut butter
• 3 tbsp butter (softened)
• 1 tsp vanilla
• 1 cup Rice Krispies
• ½ cup chopped pecans
• 1 cup shredded coconut

For the Coating:
• 1 package chocolate chips
• 1 square sweet chocolate

Instructions:
1️⃣ Mix Ingredients: Combine peanut butter, butter, vanilla, Rice Krispies, pecans, and coconut. Refrigerate for 30 minutes.
2️⃣ Form Balls: Shape the mixture into festive holiday-themed balls (consider rolling in red or green sprinkles for extra Christmas flair!) and chill for 1 hour.
3️⃣ Melt Chocolate: In a double boiler, melt chocolate chips and sweet chocolate on low heat.
4️⃣ Coat: Dip each ball into the chocolate, using a fork to roll. Place on parchment paper and decorate with festive sprinkles or mini holiday decorations.
5️⃣ Chill: Let set in the fridge. Freeze for longer storage.

Zum soweit ich weiß 10. mal ist diese Woche wieder ein Vulkan auf der Reykjanes - Halbinsel nahe dem Flughafen ausgebrochen.

Das Bild unten entstand beim ersten Ausbruch in 2021, Dani und ich konnten damals in der Nacht hoch zum Vulkan wandern, heute ist alles weitläufig abgesperrt.

Our Christmas Ornament Scavenger Hunt is back for 2024 and this year, there are six unique sets of ornaments to choose from - three Caribou Collections and three Jolly Holiday Collections! Here's a sneak peek of one ornament from each of the six collections.

On Saturday, November 30, check-in with the elves at the new Christmas Market on Sweden Street (in Lyndon Square near the caribou statue.) Each shopper may select ONE of the six-ornament collections to locate at retailers throughout the City of Caribou.

Shoppers have until December 21, 2024 to collect their ornaments from the locations listed on their scavenger hunt list. Just make sure each store signs off on your checklist when you receive your free ornament.
