A few years ago during Black Friday shopping my sister and I decided to purchase an Instant Pot. We have been long time users of slow cookers, but the Instant Pot provided a pressure cooker which is what we didn't have. So for the last almost 2 years we've used the Instant Pot off and on.

One day I was watching YouTube as usual and I happened upon a video by . She was using an Instant Pot to boil eggs. My mind was actually blown.

For years, I have been trying to find the perfect way to boil eggs so that they would come out perfectly from the shells so that my deviled eggs would look like works of art instead of desperate works of struggle.

As if reading my mind my sister came home with the Instant Pot insert for boiling eggs! So at this point I was like okay I must try this. Just to be sure I went back to YouTube to look up the technique. Because I was lazy I didn't go back to the video. I decided to just take a shot and see who else had tried boiling eggs in an Instant Pot.

Well after watching a few videos I noticed that the technique was pretty much the same for everyone: put eggs in Instant Pot, add a cup of water, put it on pressure cook for about 3 minutes, and then just let the pressure release on its own. Most of them also followed that by placing the eggs in an ice bath after the pressure released which usually took about 15 or so minutes.

I grabbed some eggs. I grabbed my Instant Pot. I grabbed the insert and I placed some eggs in the Instant Pot. I followed the procedure I had seen in all the videos as closely as possible. BOOM my eggs came out perfectly!

Today I even tried the process again just to make sure it wasn't a fluke. Again, I got perfectly boiled eggs that peeled so evenly and easily that I almost cried a little. Kind of sad that boiling eggs is the highlight of my day but ...

I suggest you try this process if you haven't already. and if you have tried it before and I'm just the one late to the game as usual, don't bust my bubble!

One of my very favorite "fast" foods is a rotisserie chicken. You can get them from almost anywhere. My favorite pick-up spots are Publix and Winn Dixie. Sam's and Wal-Mart will do, too! My cousin Trez and I have had entire conversations about them.

So, since my sister is off doing her traveling manager moment, I decided I wanted to grab something that could be used in multiple meals (so I wouldn't have to leave the house... Lol!). So I grabbed a rotisserie chicken.

The first day was just the chicken and a salad. Instead of throwing away the leftovers I bagged it and tossed it in the fridge.

The second meal - pasta. I scoured the fridge and grabbed the chicken, cheese, half and half, mushrooms, and frozen peas. Oh and butter like a good southern girl should! This meal was inspired by refrigerated pasta that was on sale at the Winn Dixie. Lol!

For meal three, I am thinking Lo Mein, maybe... Who knows...
