Helping Chefs Launch Their Dreams—One Class at a Time! 🌟

This week, my home smelled like fresh sourdough and laughter as I hosted a practice class for a talented chef looking to start her own bread-making workshops.

This is one of my favorite things about Experience 46 Degrees—giving chefs a space to refine their classes, test their pricing, and build confidence before going public. We had an incredible night kneading, shaping, and learning, but most of all, we had FUN!

Before launching a cooking class at a winery, chefs first get to practice in a welcoming environment with a small group of food-loving friends. We pay them for their time and materials, and they get hands-on experience working out the details—everything from logistics to customer engagement to pricing. Then, when they’re ready, I help them connect with wineries and other venues to take their classes to the next level.

Seeing chefs step into their dreams and build their businesses is the best part of what I do. If you're a chef wanting to teach, or a winery looking to host unique hands-on events, let’s connect! 🥂✨

Ever wonder why white wines get a cool treatment while reds don’t? 🍷

I asked myself the same question when I first started exploring wine. It turns out that chilling white wines boosts their crisp, refreshing character, making every sip more invigorating. In contrast, serving red wines at room temperature lets their rich, complex flavors shine—chilling them can even make them taste a bit bitter. For the perfect pour, just pop your white wine in the fridge about 2 hours before serving (or 30 minutes in an ice bucket if you’re in a hurry).

This group is something special.

Once a month, I get to sit in a room filled with some of the most passionate, creative, and downright fun people in Benton City’s wine industry. We don’t just talk logistics—we dream big, share knowledge, crack jokes, and come up with the next great idea to make our wine community even better. No one’s here just to “punch the clock.” They show up because they love what they do, and that energy is contagious.

I’m honored to facilitate this group and be a small part of something so collaborative and inspiring. The wineries here aren’t just neighbors—they’re friends, lifting each other up and working together to create amazing experiences.

📍 Cooking Around the World to Inspire My Own Classes! 👩‍🍳

One of my favorite things to do when I travel is take a cooking class. Not only do I get to learn about local flavors and techniques, but I also pick up small details that help me refine the experiences I offer here at home.

Things like class size, how easy it is to hear the instructor, the flow of the lesson, and even when they serve those perfect little wine splashes all make a difference in creating a seamless and enjoyable experience.

This photo is from a class I took at Mimo Bite the Experience Cooking School in San Sebastian, Greece last year, where we cooked fresh white asparagus to serve with fish. Every class I take adds a new layer of inspiration for the ones I host—because the best experiences are all in the details.

🍷 Winemaking: More Than Just Grapes and Stomping!

When I think about making wine, I often picture vineyards, grape harvesting, and maybe even some old-school stomping. All those romantic type of images flood my mind. But there is much more to the winemaking process - behind every great bottle of wine is a deep understanding of chemistry, microbiology, and precision craftsmanship.

For example, one key process in winemaking is malolactic fermentation (MLF), a secondary process where bacteria convert sharp malic acid (found in green apples) into softer, creamier lactic acid (like in milk). This is why many red wines and buttery Chardonnays have a smooth, rounded mouthfeel rather than a tart bite!

Here is Elle Zeron, head winemaker at Elk Haven Winery. She carefully monitors pH levels, temperature, and microbial activity to control how a wine develops. Too much acidity? Too little? The balance must be just right!

So next time you sip a glass of wine, remember—there’s serious science in every drop. 🍇

Last night, I hosted a private Wine 101 class, and we had an absolute blast! We explored wine and cheese pairings—some that were amazing 😋 and some that... well, let’s just say they taught us what not to do 😝. Nothing proves the power of food and wine pairings like experiencing a perfect match next to a not-so-perfect one!

By the end of the night, everyone walked away knowing:
