Chef Marcus Guiliano, Chef on a Mission Learn from the in and outs about the restaurant business from Chef Restauranteur Marcus Guiliano. Ru

I’m Marcus Guiliano — chef, author, entrepreneur, consultant, coach, and proud rogue thinker. I’ve spent over two decades proving there’s always a smarter, healthier, and more sustainable way to succeed in business and in life. In 2003, I launched Aroma Thyme Bistro with just $50K and no investors. Today it’s an award-winning restaurant and a pioneer in farm-to-table dining, sustainability, and co

nscious hospitality. Along the way, I wrote books like “50 Mistakes Restaurant Owners Make” to help others avoid the pitfalls that nearly sank me, and I’ve since coached and consulted countless owners worldwide.

🌍 What I Do & Share Here:

Coaching & Consulting — Guiding restaurateurs and entrepreneurs to scale profitably while reclaiming their freedom. Author & Educator — Books, talks, and training built on hard-earned lessons. Wine & Travel — From my wine travel business to journeys across the globe, I connect people to unique vineyards, cultures, and experiences. Doc Agave Project — My mission to support authentic mezcal & tequila producers, protecting traditions and exposing the industry’s hidden truths. Health & Lifestyle — Plant-based eating, clean living, and breaking free from mainstream myths. Speaking Truth — I go rogue, exposing industry BS and offering real solutions. I’ve traveled extensively, tasted the world, and built businesses that blend passion with purpose. Nothing was handed to me — I built it all by questioning, challenging, and refusing to accept “the way it’s always been done.”

Beautiful wine, beautiful company, and the joy of discovering vineyards around the world—this is what makes every journey unforgettable.

There’s something magical about being welcomed into a winery, glass in hand, surrounded by history, craftsmanship, and people who share the same passion for wine and travel. It’s these authentic connections—and of course the incredible wines—that make vineyard visits so special.

Travel with us and you’ll see: it’s not just about what’s in the glass, it’s about the stories, the friendships, and the moments you’ll never forget.

🍷✨ There’s nothing quite like sipping a glass of Viña Tondonia in the legendary tasting room of R. López de Heredia in Rioja. This winery is a true time capsule—founded in 1877 and still committed to the same traditional methods that make their wines some of the most sought-after in the world.

Standing here, surrounded by bottles that tell stories of patience, craftsmanship, and history, is a reminder of why I do what I do—bringing people to experience places like this firsthand.

We don’t have a trip on the books here just yet… but trust me, we’ll be back. And when we do, you’ll want to be on that list.

👉 Stay tuned—our next Rioja adventure will be one for the books.

Paella is more than a meal — it’s a gathering, a celebration, and a tradition.

In Spain, especially in Valencia where it was born, paella is meant to be cooked outdoors, surrounded by family and friends. One big pan, everyone gathered around, often eating straight from the pan. It’s about connection, conversation, and slowing down to enjoy food together.

That’s why real paella isn’t rushed, and it’s never made in tiny portions — it’s made to share.

💡 Success isn’t just about what you know today—it’s about your commitment to keep learning tomorrow.

The most successful people in the world all share one trait: they never stop being students. Every book, every class, every mentor, every challenge becomes another tool in their arsenal.

The truth is simple: 👉 Stop learning, stop earning.

If you want to grow in business, in life, or in relationships, you have to stay curious, stay hungry, and keep pushing yourself to expand your knowledge. Lifelong learning is the fuel that keeps the engine of success running.

So read the book. Take the course. Ask the question. Travel. Learn from your failures. And above all—never stop learning.

👉 I’d love to hear from you:
What’s the last thing you learned that made a difference in your life or business? Drop it in the comments and let’s inspire each other to keep growing!

Why Bomba rice isn’t just good — it’s a game-changer for paella. Here’s why the real deal matters (and why it pays off):

Absorption star: Bomba rice swells to 3× its size, soaking up flavor while keeping its shape — no soggy grains here.

Perfect socarrat: The holy grail of any paella? That crispy, caramelized crust on the bottom. Bomba’s texture helps it develop flawlessly.

Authentic texture: Unlike Arborio or generic short-grain, Bomba stays tender with toothsome bite — just how paella should be.

Price Snapshot (in the US for a 1-lb bag):

Bomba rice — typically $10–$14

Arborio / Sushi rice — around $4–$6
Yes, Bomba costs more, but you’re paying for exceptional results, not just filler. A little goes a long way — you need less of it because it absorbs more and holds flavor better.

Bottom line: Paella lovers — don’t settle. For true flavor, texture, and tradition? Go Bomba. Always Bomba.

Should you stir paella? The answer is a hard no — and here’s why.

Unlike risotto, which is meant to be creamy and stirred constantly, paella is all about texture. Once you add the broth, you don’t touch it. Stirring breaks the structure of the rice and prevents the formation of the prized socarrat — that crispy, golden bottom layer that’s the soul of true paella.

No stir = more flavor + perfect texture.
Paella and risotto might both start with rice, but that’s where the similarities end.

Delicate. Elegant. Umami like you’ve never tasted before. 🌸🍶
Meet Haku Cherry Blossom Shoyu — a rare, small-batch soy sauce from Japan infused with real cherry blossoms. Aged and brewed using traditional methods, it delivers a subtly sweet, floral complexity that takes sushi, sashimi, and even simple veggies to the next level.

In this reel, we’re showcasing the magic of this artisan shoyu and how we use it at Aroma Thyme.

🌸 One taste and you’ll understand why it’s so special.
