Earlier today, I attended an Advanced training session at Universal Orlando Resort. I have loads to share with you once I mentally process everything I learned, but since we are now 50 days away from the grand opening of Universal Epic Universe and Universal Helios Grand Hotel, I'd like to focus on that for a moment.

Helios will offer 500 rooms and suites, including How to Train Your Dragon Kids’ Suites, where little ones can take to the skies and rest amongst dragons in a colorful room inspired by the Viking village of Berk. Isn't this concept art amazing?

Regardless of which room type you select at this hotel, you will have a dedicated entrance to Universal Epic Universe just off the lobby. It can't get any more convenient than that!

Greetings from Universal Orlando Resort! I am truly enjoying my first stay at Loews Portofino Bay Hotel. I have now stayed in each of the first 8 resort hotels and will expand out toward the Epic Universe area hotels for my future visits.

Each hotel has its own charm, but I have to say that when you travel with ride junkies like me, the best perks are found at Loews Portofino Bay Hotel, Hard Rock Hotel, and Loews Royal Pacific. (I did veer into a restricted area once however, and was kindly set back on course by a friendly security officer, so please don’t follow my example if you try this on your next vacation!)

Scarlet Night pro tips:

1. Thanks to the previous tenants of our 1994-95 apartment who left a wine pairing list i the kitchen cabinet, my husband and I learned champagne pairs nicely with popcorn.

2. Thanks to my prior Virgin Voyages, I’ve learned free champagne can be had by those who are in the right place at the right time (at least for those who aren’t too shy to volunteer).

3. Thanks to the Social Club, I know free bags of popcorn can be had any time during their operating hours.

Tonight’s dinner took place at The Test Kitchen, where we enjoyed the newest menu. The eel was plated nicely, with soy sauce added for us at the table. The scallops with black garlic were served under a dome, and our servers lifted them in unison for the smoky reveal. The cheese tart was accompanied by bread. The chicken was served with broth poured table-side. And the yuzu meringue was a nice alternative to the tradition lemon meringue pie. (Yuzu is also a citrus fruit, so it made sense.)
