Banh mi is a delicious Vietnamese baguette stuffed with pickled vegetables, meat, and fresh coriander – but the sandwich has a complex history you might not know about.

"It's a sandwich that's half history, half politics."

Vietnam became a French colony in the late 19th century, but the French were not used to local food. They missed their ingredients, especially their bread. At first, baguettes were imported from the empire, but soon after, they taught their Vietnamese cooks how to make them.

What started as a symbol of French domination became a much-loved staple in Vietnamese cooking – and soon after, the baguette was “Vietnamised”. Wheat couldn’t grow locally, so the Vietnamese used part rice flour instead. They added pickled vegetables, roasted pork, chilli, and fresh coriander. Out of that innovation came the banh mi.

“It became the product of a cultural cross-fertilisation: with elements from the French, but done by Vietnamese hands, for Vietnamese mouths,” says former French diplomat to Vietnam Dr Bertrand Hartingh. “You don’t have many meals in the world like this.”

After the Vietnam war, Vietnamese refugees brought the banh mi to different countries. It’s now one of the most loved sandwiches, popular around the world.

How the French baguette got a Vietnamese makeover and became a global hit
