BEAUTIFUL BAYON TEMPLE IN SIEM REAP PROVINCE,KINGDOM OF CAMBODIA

At Angkor Thom, Bayon, the central temple is the largest with several smaller temple around it.
It’s tower have four faces looking East, North and south, suggesting that Buddha, Buddhissattava or the king himself is looking out and overseeing all four corners of the world. The colossal images of Lokeshvara in four different directions at the entrance of Bayon are designed to demonstrate compassion and power of the Buddhisattiva and the king.
As King Cambodian (Khmer) Jayavarman VII(1181-1220AD) was a Buddhist, he broke with Khmer traditions of Hinduism and adopted as his deity a Buddhist Bodhisattva. Hinduism was the state religion when king Jayavarman VII ascended the throne although Buddhism had prospered until then throughout Inchina.

Hoi An is not just famous for its ancient beauty that has been recognized many times worldwide but also for its authentic cuisine. 👉 #1 Cao lau
One of the most famous dishes in Hoi An is cao lau which is called Hoi An’s secret noodle. Cao lau is the best when being enjoyed in Hoi An and almost just available in Hoi An. To make cao lau, people have to take water from a thousand – year – old well in Hoi An called Ba Le, the rice to make cao lau must be soaked in ash water from Cham island, and the vegetables to eat along with the noodles must be from Tra Que organic vegetable village. This is a kind of noodles with just a little of the broth and being enjoyed upstairs (high floors) by the merchants from all over the world in the past.

A bowl of cao lau at street vendors’ costs from 20,000 VND – 25,000 VND/bowl. It’s easy to find cao lau in the old town or around Hoi An. Some good places to have cao lau:

– Ms. Ha, stall E035, Hoi An central market.

👉 # 2 - Quang Noodle – Mi Quang

Like cao lau, Mi Quang is served with just a little bit of broth. There are many kinds of Mi Quang. Mi Quang can be served with chicken, pork, shrimp, quail egg, snakehead fish, beef,…with vegetables and topped with peanuts and rice cracker. There are a variety of things inside a banh mi sold in Hoi An: pork liver pate, pork floss, boiled shredded chicken, pork belly, ham, tomato, cucumber, some herbs,…A banh mi costs from 10,000 VND – 25, 000 VND/loaf. 👉 #5 Grilled pork wrapped in rice paper with vegetables
If you are a fan of BBQ, this is a must try. Grilled pork in Hoi An often served along with rice paper, vegetables and a special sauce made from pork liver pate, peanut, sesame and some other ingredients.

Vegetables eaten along with grilled pork skewers are a mixture of lettuce, fish herb, sliced star fruit, cucumber, mango, young banana, cilantro, basil,…All of these will be wrapped along with the grilled pork in two layers of rice paper: one is wet rice paper and the other one is dry rice paper.

You wrap it, make it like a roll, and then dip in in the sauce and feel the taste. Um…so good!

With just 10,000 VND/skewer, you have chance to try one of the best street food of Hoi An. You can find some street vendors selling this on Hai Ba Trung St., near the crossroad of Hai Ba Trung and Tran Hung Dao St., or find some on Bach Dang St.

👉 #6 Water fern cake – Bánh bèo
Coming to Hoi An, you should try this cake since it’s not very popular elsewhere except some central Vietnam cities: Hue, Da Nang, Hoi An. Hoi An water fern cake is different from Hue water fern cake. The water fern cake here is often served in a small bowl with a wet topping made with minced shrimp, pork, spring onion and dry topping made from deep-fried Cao lau noodles.

Where to eat:

– Aunt Tai’s with her mobile banh beo cart. Some streets she often passes through Ly Thuong Kiet, Ngo Gia Tu, Tran Hung Dao. She finishes on Nguyen Hue street. She starts at 3 o’clock in the afternoon.

– Aunt Bay’s: at the corner of the old wall on Hoang Van Thu street.
Price: 2,000/bowl

👉 # 7 White Rose (Bánh Bao, Bánh vạc)
Banh bao vac is a local appetiser that resembles delicate white roses displayed on a platter. Each dumpling is made by wrapping shrimp or pork filling in flattened rice dough before cooking it in a steamer. Once soft and translucent, banh bao vac is carefully arranged on a flat plate, topped with shallots, and served with a dipping sauce made from shrimp broth, chillies, lemon and sugar. Available at most local restaurants in Hoi An, the banh bao vac are supplied by a local family residing at 533 Hai Ba Trung Street, where you can witness how this trademark dish is made.

Price: 90.000 vnd per person for plate
Location: 533 Hai Ba Trung Street

#8 Hoanh Thanh Chien (Fried Wonton Dumplings)
Hoan thanh chien may resemble Mexican nachos due its salsa-like topping, but it’s actually a fried wonton dumpling with a variety of meat fillings. Made with rice flour, the wonton is filled with diced pork, shrimp, eggs, and various spices before being deep-fried until golden. Great as a snack or appetiser, hoan thanh chien is then topped with a mix of sautéed pork, corn, shrimp, tomato roulade, and coriander leaves. Expect to pay between VND 30,000 and VND 50,000 for a massive platter.

#9 Nem Lui Hoian
Nem Lui Hoian is made in the same way as spring rolls with pork and spices, but instead of being wrapped, Hoian people shape it into long round pieces and grilled on a charcoal stove. Nem Hoian has the same way to enjoy as many Vietnam dishes. People eat it with rice paper and vegetables such as lettuce, cilantro, parsley, banana,… and a bowl of Vietnamese typical dipping sauce.

THE BEST TIME TO VISIT LAOS IN 2020 & 7 AMAZING FESTIVALS IN LAOS YOU SHOULD KNOW

Beautiful Buddhist monasteries, the Mekong cruises, colonial architecture, and delicious food—Laos offers many attractions for tourists. If you are planning to travel to Laos, the most significant thing to consider is the weather. Each season of Mongolia is favorable along with the festivals and the best of activities. This article will help you to get acquainted with the climate and to choose the best time to visit Laos.

Generally speaking Laos has two distinct seasons - the dry season between October and April, and the wet season from May to September. However, given the varying altitude of the country, the temperatures during these times can vary quite considerably. As a land-locked country, Laos benefits from a simpler weather system than other parts of Southeast Asia. Overall November through to April are the best months to travel to Laos, when the weather is warm and dry and the nights are comfortably cool. Temperatures typically begin to rise around March and the rain hits in May or June. From June through to August, the humidity can soar and short tropical downpours are common. September and October can still bring the occasional shower.

The start of the dry season (October) is a great time to visit Laos. The countryside is still lush and green, the temperatures aren’t too high (24 – 26°c) and the rains begin to ease off. From November through to February the river levels are still quite high and the temperature is on the up. However, be prepared for the evenings to be quite chilly in some places especially in the north and highlands of Laos. March and April see some of the warmest temperatures in Laos (30 – 34°c) being the end of the dry season, plus it is the start of the farmer’s ‘slash and burn’ practice where they dispose of all the remaining plant life from the harvest in time for the impending wet season.

The annual wet season in Laos starts in May and lasts until September. Like many other Southeast Asian countries the daily down pours can be short and sharp but rarely stay around all day. Temperatures are still quite high (30°c+) but with the frequent deluges, the countryside transforms into a beautiful verdant wonderland and the dry spells bring clear blue skies, so it can be a picture perfect time to visit Laos.

Festivals and Events in Laos in 2020.
The people of Laos love a good celebration and there are plenty of reasons to put on a festival with a calendar of events that mark the agricultural seasons or to honour important dates linked to the life of Buddha. Here's a selection of our favourites.

1/ Lao Food Festival.
Run by the Lao Women's Union and Lao Businesswomen's Association, this festival is in its eleventh year and brings together traditional Lao cuisine for everyone to try. It's held in Vientiane over the course of three days in January.

2/Boun Ma Kha Bu Saar (Full Moon) Festival.
Celebrated in temples and Wats across the country with the biggest celebrations taking place at the Khmer ruins of Vat Phu Champasack, this festival marks the day when Buddha delivered a speech to some 1,250 monks with chanting, candles and processions.

3/Boun Pi Mai (New Year) Festival.
This is one of the most important celebrations in Laos with three days dedicated as a public holiday during which families get together to clean out their homes, provide offerings to local temples and decorate images of Buddha with flowers. Like Songkran in Thailand, it's a time for frivolity with friendly water fights held on the streets.

4/Boun Bang Fai.
Held between April and June each year, this loud and boisterous celebration invites people across Laos to set off handmade rockets designed to herald in the rains for the forthcoming harvest. Music and dance performances accompany the main event alongside colourful processions in the larger towns and cities.

5/Boun Khao Padabdin
Laos' version of the Day of the Dead, every September families across the country honour dead relatives and ancestors with offerings of rice and over foods. For visitors, a highlight of the festival is the handmade boats that are raced along the Mekong River in conjunction with Boun Khao Padabdin.

6/Boun Ok Phansa
This festival honours the Buddhist monks that have spent the last three months fasting for lent with offerings of food presented to local temples. It's a stunning time to visit with flowers and candles set adrift on rivers to symbolise the letting go of bad luck.

7/That Luang Festival.
During the full moon of the twelfth lunar month (November) thousands of monks and pilgrims descend on the gold-covered Grand Stupa (Pha That Luang) in Vientiane. Bearing candles and floral votives, it's a particularly joyous time to visit though accommodation and other services book up quickly.
