One of my favorite Disney trip memories is a morning out of the parks. My oldest and I hopped on the Skyliner to get breakfast at the Riviera's Le Petit Cafe. This resort is BEAUTIFUL. We love the mosaics near the fountain at the entrance!

We've been "pixie dusted" a few times and once was here! My daughter couldn't decide if she wanted to get a cinnamon roll or try something new (banana bread loaf). The cast member noticed her dilemma and gifted us a loaf of banana bread to try!

We spent the rest of the morning at the Finding Nemo-themed playground and taking part of the poolside activities at POP!

Not everyone opts for rest days, but they can be nice to slow down and take in the magic of just being in the Disney Bubble! 🏰🍌🫧

It has somehow been 3 years since our first family Disney vacation! All I can say is take the trip. 🥹 You won’t regret making memories!

Now the little girl is the middle child helping her mom plan her baby brother’s first trip and ours as a family of 5! 🏰😭

Resort Feature - Coronado Springs!

Looking for a luxurious Disney resort without the deluxe price tag? Well look no further than Disney’s Coronado Springs Resort!

I stayed at this Moderate-level resort with a unique blend of Spanish, Mexican, and Southwest American cultures in December, and I’m here to share some of its highlights and lowlights.

Highlights:

✨ Beautiful lakeside oasis with classic Disney touches and modern comforts
✨ Super cool Mayan pyramid pool with 123 foot-long WATERSLIDE!! Plus 3 leisure pools and hot tub
✨ 24 hour fitness facilities + spa
✨ Only moderate resort that offers club level
✨ Amazing onsite restaurants, including a steakhouse, sports bar, cafe, grill, and food court
✨ Updated and modern rooms, especially in the Gran Destino tower

Lowlights:

😭 Transportation is bus only!
😭 The resort is big, and you might do a lot of walking if you aren’t in the tower or a preferred village room.
😭 Buses are consistent but slow. There are several bus stops around the resort, so you may have several stops before leaving for the parks or getting back at night.

Overall, I’d recommend this resort to families with older kiddos that don’t need a stroller or care about huge in-your-face Disney theming and adult-only vacationers! It feels super upscale and has all of the modern comforts you could need.

🏰 Disneyland is celebrating its 70th anniversary this summer! With ticket and hotel discounts, this is the perfect time and place to travel. 🏰

We opted for a short gulf coast spring break trip this year! It was our first time visiting the NASA space center and the Kemah Boardwalk.

To be honest, the Space Center wasn’t super geared toward little kids. There were a few interactive stations and a coloring area, but I’d say it’s best for kids 8+!

Kemah was a HUGE hit! We went with the all-day unlimited ride passes since each ride is $7 individually (around $28 for 48 inches and up and $23 for under 48 inches). For lunch, we went to the Aquarium restaurant on the Boardwalk which was wonderful! They had lots of fun rides, carnival-like food, shops, and even a DJ hosting games and a dance party for kids. I am now dying to stay at the Boardwalk resort on our next Disney trip! 🏰😊

That evening we ventured out with our beach toys to El Jardin beach in Seaside. It reminded me why I love Gulf Shores 🤣🤣 but the girls had a blast playing in the sand.

We ended our last night at Chili’s with the dip trio and 3 desserts to split! 🍪

FINALLY going through our Royal Caribbean cruise pictures from October 🙈

I can’t get over how much there is to do on a cruise. We rock climbed, mini golfed, hit the arcade (many times!), ice skated, went to family science and bingo, did Texas trivia, and watched amazing shows!

We knew we wouldn’t spend too much time in the room and got a super-reasonably priced interior cabin that slept 4. Can’t wait to sail again!!

Country Bear Jamboree at Magic Kingdom has been revamped, and it is ADORABLE! It’s usually a pass for us, but not anymore 🐻🏰

The characters are hilarious and sing favorites like A Whole New World and Fixer Upper.

If you have littles or if you enjoy being entertained while getting off your feet, this is a must do! Located in Frontierland.

🦀 Subastyn’s Bistro!

We were in search of a hidden gem resort restaurant for our arrival night in December and we hit the nail on the head at Subastyn’s Bistro located at the Caribbean Beach Resort, on the Skyliner!

The atmosphere is quaint, beachy, and beautiful. Our server was super friendly and knowledgeable which was greatly appreciated for our first time dining there.

Food is served family-style, all you care to enjoy starting with yummy rolls (with amazing guava butter!!!) and tropical salad with key lime dressing. Then there is a huge platter of Caribbean-style pork, chicken, beef, and fish with sides of cilantro rice and beans, vegetable curry, and roasted vegetables. For dessert was a giant plate of coconut-pineapple bread pudding with vanilla ice cream and caramel sauce. It was all delicious!

The cost was $38 for adults and $20 per child which felt extremely reasonable for all of the courses plus soft drinks. I highly recommend getting a (dinner only) reservation at Subastyn’s Bistro! 🦀🏰
