There was a law in Ancient Athens that required tavern owners to always serve alcohol with food, even if they needed to provide the food “on the house.”

Meze derives from a word meaning, “middle”. It was named to express its purpose.

Meze isn't considered to be a meal time.There is a culinary tradition in Greece and other Mediterranean countries referred to as meze.

This is a concept that closely resembles our concept of “appetizers”, but in Greece, it’s much more than that.

These small plates are meant to be shared and enjoyed amongst friends and family over a long period of time.

There is something about sailing the Mediterranean especially Greece and the amazing food one gets to eat.. try this at home and let us know

Mediterranean Ricotta and Pita Board

Ingredients:

1 cup (250 g) ricotta cheese

2 tbsp (30 ml) olive oil, plus extra for drizzling

½ tsp lemon zest (1 g)

Salt & pepper, to taste

½ cup (75 g) mixed olives, pitted

1 tbsp (10 g) capers, rinsed

1 small garlic clove, minced (3 g)

1 tbsp (5 g) fresh parsley, chopped

1 tsp red wine vinegar (5 ml)

¼ tsp chili flakes (optional)

4–6 pita bread rounds, cut into wedges

Directions:

In a food processor, combine olives, capers, garlic, parsley, vinegar, and olive oil. Pulse until finely chopped but still slightly textured. Season with chili flakes if desired.

Spread ricotta onto a serving board or shallow platter, leaving small swirls for texture. Drizzle lightly with olive oil.

Spoon the olive tapenade over the ricotta. Garnish with extra herbs if desired.

Serve with warm pita wedges for dipping and scooping.
