Mediterranean Ricotta and Pita Board
Ingredients:
1 cup (250 g) ricotta cheese
2 tbsp (30 ml) olive oil, plus extra for drizzling
½ tsp lemon zest (1 g)
Salt & pepper, to taste
½ cup (75 g) mixed olives, pitted
1 tbsp (10 g) capers, rinsed
1 small garlic clove, minced (3 g)
1 tbsp (5 g) fresh parsley, chopped
1 tsp red wine vinegar (5 ml)
¼ tsp chili flakes (optional)
4–6 pita bread rounds, cut into wedges
Directions:
In a food processor, combine olives, capers, garlic, parsley, vinegar, and olive oil. Pulse until finely chopped but still slightly textured. Season with chili flakes if desired.
Spread ricotta onto a serving board or shallow platter, leaving small swirls for texture. Drizzle lightly with olive oil.
Spoon the olive tapenade over the ricotta. Garnish with extra herbs if desired.
Serve with warm pita wedges for dipping and scooping.
