Before we welcome guests next week we are being spoilt Kate & Nathan Veach. We are this time on the receiving end of incredible hospitality in the Burgundy region of France.
I have known Kate & Nathan for over a decade running amazing venues back home. Bistrot Plume being an all time favourite.
Now with their permanent move to France it's been so wonderful to experience their France through their eyes.
I can't wait to share my Italy through my eyes with my guests next week.

Risotto, it's a serious business!
I've been making risotto since I was around 10 and I would have to say it remains still my favourite dish.
I never order it in Australia because I'm always disappointed especially when it's served in a bowl like fried rice. You see it should be served on a flat plate where you use the palm of the hand to tap the underside so the creamy risotto spreads across the plate.
I serve mine very much on the al dente side also using carnaroli rice lashings of butter and grana padano cheese
Today's risotto is made with chanterelles.

Just finished off an amazing week on the Greek island of Amorgos. I had never heard of it before and it did not disappoint.
I can honestly say it was the most relaxing week I've ever had.
I had the pleasure of experiencing amazing hospitality where you felt looked after and seen.
