The layers shatter on the first cut, the inside stays soft, buttery and impossibly light, and the whole thing pairs perfectly with a strong coffee on a cooler morning. This box of handmade truffles from 31 Degrees Custom Chocolates in Woolloongabba is a genuinely different way to taste a delicious combination of flavours. Made by hand, in small batches, using French and Swiss couverture, each chocolate leans into signature flavours, seasonal delights and even the tropical and subtropical fruit the region grows so well. It is proof that Brisbane's produce belongs in fine chocolate as much as it belongs on a plate.

A guided amaro tasting with Andre at before + after on a recent Saturday.

Amaro Montenegro, Amaro Camatti, Amaro Meletti. Three bottles, three regions, three completely different reads on what a bitter Italian digestif is meant to do. Andre walked us through each one properly, the history, the botanicals, the reason each one exists.

The kind of tasting that reminds you why sitting at a bar with someone who knows the shelf is a genuine skill, and worth an hour of anyone's evening.

The Gresham Bar sits in the lane that once held Brisbane's grandest hotel, 77 rooms, among the first buildings in the city connected to electricity, the site where Qantas was formally established in 1920. The hotel didn't survive the 1974 floods. The lane did, and so did the name.

It isn't a wh***ey bar, a cocktail bar, or a w**e bar exactly, it's the best parts of all three, which is presumably why Gourmet Traveller called it Australia's Bar of the Year back in 2015. This visit ran a Solid Gold, a Sunny Boy, and an El Paso, three completely different directions off the one short menu.

Doodee Boran on a recent Saturday, spread properly across the table.

A larb chicken to start, a jungle-style beef with green beans and holy basil, a slow-cooked massaman with the potato holding its shape the way it should, jasmine rice, coconut rice, a mango juice for the person who needed a breather from the chilli. This is the kind of ordering that only really works with a group, everyone tries a bit of everything, nobody has to commit to one dish.

Never Never oyster gin, made beautifully, served with a side of pickled vegetables to garnish it yourself.

The self-garnish move is the giveaway. A bar that trusts its drinkers to finish the drink, on a martini they've otherwise nailed end to end.
