Residents in the Perth Hills have raised concerns about thousands of litres of water extracted from a bore on private property by Coca-Cola Europacific Partners for its bottled water products.

The water has been extracted legally by Coca-Cola since the 1990s, but residents are calling for more transparency about how water is being removed, amid drying climate conditions.

Cathy Chmielewski, a local orchardist, told Nadia Mitsopoulos on ABC Radio Perth she'd been raising concerns about the water extraction since 1992.

Whoโ€™s ready for Christmas? Not long until the big day. Hereโ€™s a lovely little idea thatโ€™s perfect for sharing and easy on points so everyone can enjoy.

250g reduced fat ricotta
200g 99% fat free plain yoghurt
1 lemon zest + juice
25 mini meringues
2 1/2 tsp dark choc chips
2 tsp icing sugar substitute
20-25 Fresh Raspberries
40-50 Fresh Blueberries
7 Fresh Strawberries halved
1 x Fresh passionfruit Pulp
Fresh mint sprigs

In a small food processor add ricotta yoghurt, lemon zest & juice. Process until smooth.
Spoon into a pipping bag with a star nozzle.

Arrange meringues into a wreath shape.
Pipe each with filling.
Decorate with fresh fruit, choc chips & mint.
Dust with substitute icing sugar

Serves 25
2 points each - Best made and enjoyed fresh on the day. Filling can be made the day before, popped in a icing bag and stored in the fridge.

Potato Salad: Old fashioned potato salad- just like mom used to make! Tangy, creamy, and a perfect side dish for your next get-together!

This potato salad recipe is exactly like I remember having, all throughout my childhood and beyond. Itโ€™s a real classic, with fluffy potatoes, crisp celery, sweet onion, and rich hard-boiled eggs in every luscious bite, all coated in a tangy, creamy dressing.

My favourite kind of potatoes for potato salad (or just about anything else, really) would be russet potatoes. Theyโ€™re versatile (you can use them for anything from potato soup to scalloped potatoes to stuffed potato skins to mashed potatoes) and they always cook up fluffy and delish. But you can use any kind of potatoes you like! I think Yukon gold potatoes could also work well.

Leave the skins on or take them off? Itโ€™s entirely up to you. For the photos I chose to peel the potatoes. But I also like a skin-on potato salad just as well. To me, it seems to make the potatoes taste even more potato-ey. Which Iโ€™m always down for.

Ingredients
4 pounds potatoes* (approx. 6 medium russets)
3 tablespoons kosher salt
3 tablespoons white vinegar, divided
4 hard-boiled eggs, chopped
2 stalks celery, diced
1 sweet onion or green onion, diced
15 ounces (425gr) mayonnaise
2 teaspoons yellow mustard
1 1/2 teaspoons celery seed
salt & pepper, to taste
1/4 teaspoon paprika (optional garnish)
1 teaspoon chopped fresh chives (optional garnish)

Instructions
Cube the potatoes into bite-sized pieces and place them in a large pot of cold water.

Add the salt to the water and bring the pot up to a boil over medium-high heat.

Reduce the heat and allow the potatoes to simmer until fork tender (approx. 10 to 15 minutes).

Drain the potatoes and sprinkle them with 1 tablespoon of vinegar.

Place the hard-boiled eggs, celery, and onion in a large bowl along with the mayonnaise, remaining vinegar, mustard, and celery seed.

Stir to combine.

Fold in the potatoes, taste, and season with salt & pepper (if needed).

Transfer the potato salad to a serving bowl and garnish with paprika and fresh chives, if desired.
