We've had terrible winds the last couple of weekends so there's a 4 hr trip planned Friday arvo 12:30. Weather is looking perfect. Only 7 spots left.

After a bit of a boat ride out to the more productive grounds, everyone got a good feed of flatty tails, calamari and the gummy was shared amongst 6ppl . Great morning. There are a few spots still available before Christmas. Our bookings are available from our website. 24/7.

This is a post for everyone that likes to buy fish.

These eyes aren't starting to go pearly, they were gutted, gilled and scaled in seawater while alive. Then quickly chilled for 6 1/2 days in the bag!!! Opening and smelling the bag, I wouldn't eat them, they will go in the garden but on a display case at the supermarket they look fine still... So I guess the lesson is source local supplier, if you don't fish. Go on a fishing Charter, have some fun , bring home some freshly caught fish. They will taste better than bought fish.Or you may be buying a fish from market, that is a week old..... or more.

About 40 salmon, 3 pinkies and this nice gummy caught by Courtney it's only 9:30am,2 1/2 hrs into this mornings trip.

For the juiciest flake ever.
1.cut into 12mm slices
2.roll in flour
3.spread thinly with butterknife Tommy mayonaise.
4.coat in 1/2 breadcrumb, 1/2 panko breadcrumb mix.
5. Deepfry on 170degs for 3 mins. Or shallow fry in a pan, olive oil till crumbs go crisp each side aprox 7 mins. (depending on oil temp)
6. Sauce.. (125ml) 1/2 sour cream 1/2 mayonaise (125ml). 2 tsp cracked pepper. 1/2 tsp Maldon salt or garlic salt.
1 cup finely chopped dill, juice 1 big lemon. (extras may include 1tblsp finely chopped capers, or 2 dill pickled gerkins)
