So fab meeting Celine and Amit, the dynamic duo behind Conspiracy Chocolate in Hong Kong! Even after the work day was over, they welcomed us to a factory tour, patiently explaining the process to my child :) and a tasting of their delicious bars & bonbons -- even sampling their innovative mousse!

Of course, I couldn't leave without getting a box of their pistachio praline & raspberry mooncakes (better than real mooncakes) -- artisan, authentic, delicious.

And had to get some of their bars -- with ingredient combos that are rare in Europe & the US!

If you're in HK, definitely try them out!

Amit & Celine are the real deal -- dedicated bean-to-bar chocolate makers who know their cocoa growers, and make delicious chocolate 🍫!!!

Thanks to all of you who have followed me in the past months :)
Just to give a little intro, I'm Cathy, & I'm a passionate chocoholic... so much so that I left my career in Finance to immerse myself in chocolate -- literally :)
Originally from New York (City ;), I moved to France, where I was able to apprentice with the then President of and learned to taste & create chocolate bonbons. It was a dream!
Since then, I've had the privilege of working with wonderful chocolate creatives such as and and now have the privilege myself of sharing my passion and knowledge with visitors on chocolate adventures in Brussels.
It goes without saying, I'd be happy to take you on a chocolate-tasting and -making journey too! Just reach out :)

Such a privilege to be in London as a Judge for the Academy of Chocolate Awards... Yes, it was a hard job tasting all those chocolates 😅
I can't post any photos of the chocolate for privacy reasons, but I can post photos of beautiful London!
(Fortnum and Mason has made their window display into a giant advent calendar!)

So, finally completing my NY trip were 2 delicious twists on the classics --
mochinuts !! Instead of using regular flour, they use mochi to make these donuts with all sorts of flavors including taro, green tea and black sesame. Really yummy!!!

And matcha cheesecake from Mishin Ramen, a very good blend of matcha and cheesecake flavors, wonderful consistency, not too heavy but just right.

And then off to a little beach on Albania to enjoy the last days of summer... Hope you're all getting to enjoy the last days of summer too!!! :)

It's been Restaurant Week in NY! More like dessert week :)

In between visiting beautiful local spots, we've been enjoying some iconic faves as well as delicious novelties (in the next post ;)! 

Notable desserts are the Tarte Tatin from L'Express, New York blackout cake from Red Eye Grill & rich cheesecake from Sea Fire Grill... If you're in town, you should try them out! The Tarte Tatin is especially impressive for a French dessert in the NYC scene.

From Belgium treats to New York sweets! Am grateful to be in my hometown visiting family, friends.. and of course enjoying some New York cuisine ;)

These desserts from .bakery were very good, especially the passionfruit one shaped like a donut, and the coffee praline cake. Not to miss if you're in Brussels!!

And transitioning to traditional American fare.. these rich cookies from are worth trying! Pictured here are the Reese's pieces PB cookie and almond butter cookie filled with pockets of jam. Served warm and super indulgent, you may want to save some for later as they're 1/2 lb. each!
Yes, those are real cakes these talented cake artisans have made.. even the one that looks like Chinese takeout!

Well.. will post with more worthy sightings from NY along the way ;)

Not everyone knows that there are unconscious biases against women in this world, which makes it so much harder to succeed. That's why on this international woman's day, I'd just like to recognize some fine craft chocolate makers who have female founders, co-founders or farmers. There are many more, thankfully, so please continue to support them!
Not just because they have women on their team.
But because they've got women *and* good chocolate done right. 😊❤️🍫
