Barolo Chinato (key-nah-tow) is an ancient Piedmontese digestif made using Barolo Albe DOCG as a base, then infusing it with around 30 herbs, rinds and roots of plants.
It is a flavoured wine, not a fortified wine like Port. This means that most of the alcohol content (18%) and sweetness are due to the herbal and spice infusions in alcohol together with the sugar added to the Barolo. It is deep in colour, with lovely aromatics, and a complex palate.
Chinato is an ideal winter sipper, so get out the dark chocolate, enjoy it on its own, as a digestif, or make a Chinato Spritz with some soda (and Cava if you like).
