Our dining experience at L’Oustau de Baumanière is a sensory journey that lingers long after the evening has ended. Under the direction of head chef Glenn Viel, awarded three Michelin stars, the menu Flânerie combines refined Provençal flavours with contemporary precision. A tribute to Monsieur Thuilier remains in the iconic Crêpe soufflée au Grand Marnier — a timeless classic that still holds its place beautifully today.

Some places reveal themselves slowly — and then stay with you long after leaving. At our Prestige Deluxe Room No. 63 in the L’Oustau building felt deeply connected to its surroundings. A tree rising through the bedroom, an expansive bathroom, and a private terrace where the limestone cliffs of Les Baux feel close enough to almost touch. Spring on the plate — asparagus, morels, peas, and an abundance of herbs, shaped by the extraordinary garden surrounding La Chassagnette in the heart of the Camargue. A true temple of vegetables, set beside a kitchen garden of over two hectares, where more than 160 varieties grow in vibrant abundance.

Guided by chef Armand Arnal, this culinary experience feels deeply connected to its landscape. Lunch stretches effortlessly into the afternoon, until nearly five — unhurried and entirely in tune with the place. It is the kind of setting one is reluctant to leave.

Stepping into history: At in Avignon, it begins with mosaic tiles underfoot — a quiet, almost tactile sense of another time.
High ceilings, antique parquet and patterned tiles set the rhythm of the house, while walls are dressed in archival fabrics — 18th-century designs reissued by Braquenié, Le Manach and Rubelli. Carefully gathered antiques and paintings, curated over time by the Stein family, lend each room its depth, its softness, its quiet sense of continuity.

From corner Room no. 20, the view opens gently — over the garden and towards the Palais des Papes, ever-present yet never imposing. A true room with a view.

At La Table des Amis by Christophe Bacquié, spring is expressed with precision and a distinct Corsican accent. Awarded with 2 Michelin stars, the cuisine reflects both place and origin with quiet confidence. Our highlights:

• Aïoli moderne — vegetables from local market gardeners
• White asparagus, roasted, with rocket and bergamot
• Stuffed morel, onion jus, spring vegetables, green asparagus and artichoke
• Line-caught dentex, confit, infused with verbena berries, grilled tuberous nasturtium and wild broccoli
• Pink Corsican pomelo, sorbet and granité, infused with Batak berries

Some people collect cars or watches — I collect hotel stays.

Even as a child, grand hotels held a special fascination for me. The quiet elegance of true hospitality, the perfectly polished silverware I could see myself reflected in — those early impressions stayed with me.

Today, I have the privilege of travelling to some of the most beautiful hotels. What I seek is no longer grandeur, but places with a sense of coherence — thoughtful concepts, carried by a warmth and sincerity that feel entirely genuine.

High above Bonnieux, I found exactly that at Capelongue. A harmonious boutique hotel spread across five buildings, where terracotta, wood, linen and handcrafted Provençal ceramics define a quiet, understated aesthetic. In the morning, as you open the shutters, there is no doubt where you are — the light, the view, the stillness. And then, the effortless ease and genuine kindness of the people who bring this place to life. Provence at its most beautiful. No polished silverware — and yet a place that quietly stays with you.

We stayed in Deluxe Room 212 with terrace — a small secret, overlooking the church tower of Bonnieux in the distance and the rolling hills of the Luberon.

The 3rd Edition of the Zermatt Wine Sessions opened with a lunch at Zum See, dedicated to Valais wines — a tribute to some of the region’s most distinctive and expressive bottles. An afternoon shaped by the character and diversity of Valais wines, accompanied by a refined menu from the Zum See kitchen — where, of course, the legendary mille-feuille cream slice could not be missed.
