🔥One Xinjiang bite a day: Xinjiang Naan🔥
I still remember the first time I saw them—mountains of golden wheels stacked higher than my head at a Sunday bazaar in Kashgar. The air was thick with the smell of sesame and something smoky, something ancient.
A Uyghur grandfather with hands like leather was pulling these beauties out of a tandyr oven—a clay pit so hot it could singe your eyebrows off. When he tossed me a fresh one, still too hot to hold, I nearly dropped it into the dust.
But that first bite?
Worth every singed fingertip.
The outside was all crackle and crunch, studded with black sesame and glistening with oil. I tore it open and steam rushed out like a secret—inside, it was pillowy, soft, slightly sweet from the milk wash. No utensils. No plate. Just me, this perfect circle of warmth, and a thousand years of tradition in my hands.
Here's the thing about Xinjiang naan—it's not just bread. It's what travelers packed for the Silk Road. It's what families break together at sunset. It's what kept that grandfather going for 50 years by his oven.
I watched a little girl run past and grab one for breakfast. A truck driver bought six for the road. And me? I ate mine standing there, tearing off pieces, watching the snowcaps glow pink in the distance.
