Making the modern version of the Central Asian ancient energy ball type of recipe instead of traditional cookies for Christmas. It is almost raw, except for the chocolate topping that I made myself heating 100% cacao, almond milk and plant based butter on the super low temperature. Ingredients: grated grains, almonds and walnuts slowly roasted on a low heat, honey and warm (plant based) butter. Mix it and form into balls. Covered in three types of topping: home made chocolate, sesame with home cooked honey syrup and pure cacao powder.

The mono bakery in Berlin. Two types of traditional simple bread only: from rye and from spelt. Amazing crust is the signature. You find them always here. One more bread type that is offered occasionally with a bit of creative touch, e.g. with nuts or dried fruits. Nice Stullen for lunch with savory fresh ingredients. A bit of sweet baked goods in addition to couple them with a well prepared coffee. A good example of downsizing the assortment and the work with regional farmers. @ 100Brote

One of the best ice cream places I’ve tried in Rome so far. Organic ingredients, well thought design, the ice cream sorts that make you crazy. A big compliment to the owners for keeping the menu short and to the point. There are only 10 sorts to choose from and all of them are classic tastes in the purest form, like e.g. pistachio, sabayon, crema, hazelnuts. Full stop. No need to study 20 or more options as in most of the places. What made me especially happy is the traditional milk ice cream served here, so simple and pure in its minimalistic taste, that is so rare to find. @ Rome, Italy
