Some recipes find you when you least expect them.

I was at a food show at Olympia in London, making my way to the exit, when a voice asked if I liked chocolate. I turned around — it was Willie Harcourt-Cooze, the man behind Willie's Wonky Chocolate Factory.

We got talking. He gave me his recipe for chocolate-basted partridge — dark cacao and goose fat painted over the bird, wrapped in pancetta, and roasted until glossy and extraordinary. Then he gave me a block of 100% pure Nicaraguan Black that I still have to this day.

I gave him my business card. He promised to buy some of our organic Puerh tea.

He never did.

The recipe is on the blog — one of the more unusual things I've cooked, and one of the best.
