Our protagonists today are the Canarian potatoes, also known as papas arrugadas (wrinkled potatoes). They are one of the most famous and representative dishes of the Canary Islands.
These tiny wrinkled potatoes are a must try when you visit the Canaries.

Did you know how Canarian potatoes get so salty originally?
The truly authentic and the original way to prepare papas arrugadas is by boiling the potatoes in seawater. This recipe came out from necessity. The fresh water used to be often short in the Canary Islands — so locals had to prepare Canarian food with the resources that they had. This way, they boiled the delicious Canarian potatoes in seawater.
Happily, their experiment due to lack of resources turned out to be a real success!

How to cook Canarian potatoes.
1. First of all, take the small potatoes and wash them thoroughly. Scrub all the dirt from their skin, but don’t peel them! This is how they get their wrinkled look.
2. Then, place the washed potatoes in a pot. Cover them with water and add 4 or 5 tablespoons of sea salt and half a lemon. Let them boil for about 20 minutes until they are tender enough. To check if they are tender or not, you can try poking the potatoes with a sharp knife.
3. Finally, pour off most of the water and return to heat. Keep moving the potatoes around till the pot gets dry and see how they get wrinkled as the water evaporates. You will see how the salt appears on the potatoes. It is a kind of magical!

Canarian potatoes? Better with mojo sauce
This recipe is typically served with mojo sauce. Just in case you don’t know mojo sauce, you should know that it is a delicious sauce typical from the Canary Islands.

This sauce is the perfect complement for any Canarian recipe. You will see that there are two different types of mojo sauce — red mojo sauce and green mojo sauce. On the one hand, red mojo is flavoured and coloured with pimentón (paprika), red pepper, chili, and cumin. On the other hand, green mojo uses coriander or parsley and green peppers.

Hope you taste them next time you are in Tenerife!

Whale and Dolphin Watching

Experience the thrilling and palpable sense of anticipation as you scan the deep blue waters waiting on these smiling marvels to honour us humans with their presence. The same climate that attracts holidaymakers also bring whales and dolphins to the temperate waters of Tenerife. Up to 21 different species pass through the channel between Tenerife and La Gomera annually. Minke, s***m whales and even orcas are regularly spotted in the seas around the Canary Islands. As well as transient visitors, like the Bryde whales in 2014, who hung around for weeks gorging on sardines; there are resident pods of bottlenose dolphins and pilot whales, so just about every whale and dolphin watching trip can, more or less, guarantee sightings.

Tenerife is one of the top destinations in the world for whale watching. Subsequently there are a lot of trips to choose from. Whale-watching boats depart from most of the main southern ports, however, the best places to catch a trip are i)Puerto Colón in Costa Adeje and ii) Los Gigantes. Los Gigantes is especially good as it's directly opposite La Gomera, prime whale and dolphin spotting territory. Plus, you get the most spectacular backgrounds as a bonus – La Gomera on one side and the Los Gigantes cliffs on the other.

Thankfully, the whale watching industry in Tenerife is highly regulated and ethical. Boats have to comply with a recommended code of practice regarding cetacean watching practices (e.g. levels of noise, how close they can get to animals, speed, length of time spent near any one individual creature).

You will be entertained and educated as you observing these magnificent creatures in their natural habitat, listening to them on a marine hydrophone and make more discoveries from enlightened biologist guides but when the whales and dolphins have had enough of entertaining delighted onlookers, they simply turn tail and swim off into the deep blue sea.

El Médano - Tenerife's Surfers Paradise

Situated only 15 minutes’ drive from Las Adelfas 2, the small coastal town of El Médano, original a fishing village, still maintains that feel. It has for many years attracted surfers from all over the world in search of the best waves. El Médano is considered to be a surfer’s paradise and is known for its shallow beaches and picture-perfect location, right next to the mighty "Montaña Roja" mountain.

You will be able to enjoy a variety of different water sport activities in El Médano; kitesurfing and windsurfing being the most popular choices. There are plenty of water sport instructors and rental companies at the end of the beach boulevard, you can try anything from stand-up paddle boarding to kayaking.

The beach boulevard cafes serve snacks, cold beers, crêpe and ice-cream to people watching the kite boarders and surfers put on their acrobatic ballet. Away from the beach, if you stroll down the cobbled laneways you can browse in the many artisan shops or find a quaint seafood restaurant overlooking the sea serving local catch, fresh and delicious.

No.8 on our list of suggestions for your bucket list when you return to Tenerife:Take a trip to the North of the island to swim in one of Tenerife’s natural pools. The crystal-clear waters of the Atlantic Ocean is always a pleasure but the experience turns into something unforgettable when you swim in one of these natural pools, all of which are full of charm and are strikingly beautiful. The natural pools are enclosed spaces due to their natural formation, where the sea water seeps without any human intervention, (apart from adding steps, walkways and diving points). This is why they are a must for all visitors who can enjoy a refreshing dip in these natural spas with their special healing qualities.

i) Charco del Viento - Swim with views of Teide

If your idea of a great day out is admiring lava formations bathed by the seawater and creating natural pools, you’ll find four of them in Charco del Viento, the most popular swimming area in La Guancha and one of the best known and easiest to access in north Tenerife. Even though the force of the sea enters at times, the beauty and contrasting natural colours of this area allow safe bathing in different parts, with some sandy areas and rocky parts ideal for sun-bathing. Getting to this particular spot is relatively easy. Take the road which brings you to the borough of Icod de los Vinos, and follow a tarmac path to the pools, which are signposted and passing through banana plantations. There is a large parking area and steps down to what is a natural treasure multiplied by four, with magnificent views of Teide behind you.

ii) El Caletón de Garachico - aswimming spot for all the family in one of Tenerife’s charming towns

The Atlantic has arms that soothe and the area of El Caletón the north of Tenerife more than proves it. Just beside the San Miguel 16th Century Castle and with the imposing presence of the famous rock, a symbol of the Garachico eruption of 1706 when this was the most important port in Tenerife; this area of pure lava offers the perfect combination of open sea and calm large rock pools for the whole family, just metres away from all the services you need for a lovely day out. Swimming in El Caletón isn't just about recharging your batteries in the salt water; it also offers you the chance to see a part of one of the most beautiful historic centres of the Canary Islands, with the spectacular La Culata cliffs and views along the rest of the northern coastline. There are lifeguards during the summer, a restaurant on the lava itself, parking facilities, a public swimming pool next door, a beach nearby, the new port and numerous fabulous places to visit, where you can eat or shop. Everything you could ask for in one delightful spot.

iii) Charco de La Laja - A volcanic pool for all ages in San Juan de la Rambla, one of Tenerife’s most attractive villages.

The intense blue of the Atlantic Ocean is turned into a subtle colour palette in the main bathing area of San Juan de la Rambla, in the north of Tenerife. La Laja rock pool can be seen from the lookout point of the same name and cries out to be photographed from a variety of angles, enticing you to walk down the steps as quickly as possible to submerge yourself in the calm, crystal waters, protected from the rough sea by the volcanic rocks that surround it. A natural spa with historical wealth and restaurants nearby. Located right in the heart of the historic quarter of one of Tenerife’s most attractive villages, which is also blessed with the best climate in the area, this jewel in the Canarian crown makes a surprise appearance at the end of one of the busiest streets in the village. With excellent access, a sun bathing area and three bars and restaurants close by to recharge your batteries, a dip in the La Laja pool lets you delight in the partnership of the lava and the Atlantic Ocean, which have created an unforgettable natural spa.

iv) Piscinas de Bajamar – one of the best natural and family-friendly water parks

Regardless of the strength of the waves in the open sea, a visit to the natural pools of Bajamar, in the north-east of Tenerife, is something that will always delight the senses. There are two large pools and a smaller one for children, a golden sand beach protected from the sea and many nearby services. All this combines to make a visit to the coastal part of La Laguna, whose city centre is a UNESCO World Heritage site, a real pleasure. Bajamar is now recognised as one of the best natural and family-friendly water parks. The reassuring presence of lifeguards, its well-kept installations, the cleanliness of the water and the sand, the views and the presence of the mythical lighthouse combine to make this a perfect place to visit, with ample parking and various restaurants and shops close by. And if you visit on a day when the sea is rough, get your camera ready as the high waves will give you some incredible pictures to take home. A defining image of the island, and an unmissable sight.

No.7 on our list of suggestions for your bucket list when you return to Tenerife:

Loro Parque is one of the Canary Island’s top spots for a daytrip. Located in Puerto de la Cruz in the north of Tenerife, this exciting park is packed with colourful parrots, is home to the best dolphin and orca shows on the island and houses Planet Penguin where these cute creatures splash around in Antarctic conditions.

Since opening in 1972, more than 19 million visitors have passed through its doors and it has expanded into a renowned attraction that promises a fantastic day out for all the family.

The founder and owner of Loro Parque, Mr. Wolfgang Kiessling, is now an international figure with his unique collection of over 3,000 parrots which include 300 species and sub-species. About 700 are in the park and the rest are housed in the breeding station, where sometimes you can see the little ones hatching and being fed.

In 1994 the whole collection was donated to the Loro Parque Foundation whose aim is to preserve endangered species of parrots and their habitats, raise funds for field studies and carry out research and conservation projects. It also organises the breeding programmes aimed at reintroducing these rare parrots back into the wild. The foundation takes part in 18 captive breeding programmes and is directly involved in co-ordinating the Spix’s Macaw Recovery Project, the Blue-throated Macaw and the Red-browed Amazon.

Orca Ocean was also introduced to Loro Parque in 2006 and has become one of the park’s showpieces. Working alongside Sea World in the USA, this project has successfully bred four orcas in captivity, which live in one of the most modern installations in the world consisting of 22.5 million litres of seawater. They work very closely with the orca trainers and every day they show off their skills in front of the crowds at Loro Parque. In addition, you can also watch sea lions and dolphins.

Around every corner you will find cute animals, funny birds, amazingly talented creatures, colourful marine life and much more. Loro Parque deserves its ranking as one of Tenerife’s most visited attractions – spend a day here and you will see why.

The park opens every day from 8.30 to 18.45pm.
