"Our Santorini experience had six participants in it. 2 Canadians, 2 Japanese and us. The classes were beginning while the sun was still relatively high in the sky, but we were spared it wrath in the shade of the veranda, looking out over the caldera of Santorini. I have been fortunate enough to take cooking classes on three different continents, in many different countries.But these ones were my hands down favorite. Almost from entering, the chemistry between Yannis and us was palpable. His passion for cooking, hospitality and engaging the participants exceeds anything I’ve been apart of before. The wine tour was also really good, the food was great and the conversations were so entertaining."

A special and unique way of vine pruning is the one developed on Santorini, known as the Santorini “kouloura”, or “wreath” or “basket”. The origin of this way of training vines is lost down in the passage of time and has been perfected to such an extent that, apart from being the most suitable way of training them, it also gives vines the appearance of natural works of art.

In order to train the vines into a Santorini “kouloura”, experienced vine dressers weave the canes of the vine into the shape of a large wreath-like basket which rests on the island’s volcanic soil. Once fruiting begins, the grapes grow sheltered within their “woven” baskets.
