Its finally raining and the thirsty vines after all their hard work during the long hot dry summer, before the winter rest when the sap goes down into the roots and the vine is dormant till spring. these are the skins after pressing aftee fermentation and maceration. LOT of skins this year - not much w**e 🙃 but very concentrated **eguidebordeaux

where we understand the magic of the blend here in Bordeaux. We taste the 100% Cabernet Sauvignon, Merlot and Petit Verdot in the vineyard plots and then the blend of the final 2019 Chateau Angludet 2019 guessing the % of each in the blend ( 45% cab sauv, 43% Merlot, 12 % Petit Verdot). Et Voila the symphony balanced in pure harmony not playing their own simple tune but a real syphonic orchestra! **eguidebordeaux

in St Julien fermentation of the 2026 vintage the bubbling of the carbon dioxide coming off the vat below as the yeast ( sacchoromycss cerevisae - the same as used in making bread) multiply producing alcohol and gas ( CO2) that pushes the skins to the top of the vat - and heat..LOT of skins this year - not much juice.... **eguidebordeaux

This is my school run to the little school of St Valery (the patron saint of the vines of St Emilion) in the heart of the medieval village founded in 9th century. This is Chateau Pavie one of the two Premier Grand Cru Classés A from the last reclassification in 2022. **eguidebordeaux there are not many guides that live in the vineyards. It does add a couple of hours to my day but I wouldnt have it any other way and it keeps me more than in touch with whats happening

Locally is known as the Noir de Pressac as it was here that this grape from Cahors to its south was introduced to this region. New Malbec Cuvée to be released if all goes well 2026 vintage
