🇫🇷 Salade Lyonnaise (Lyonnaise Salad) 🥗🥓🍳
A crisp, tangy salad of frisée, bacon, and poached egg — classic bistro fare!
Ingredients
1 head frisée or curly endive
4 strips bacon or lardons (100 g)
2 tbsp red wine vinegar (30 ml)
1 tsp Dijon mustard (5 g)
¼ cup olive oil (60 ml)
2–4 eggs (poached)
Salt, pepper
Instructions
1️⃣ Make vinaigrette – Mix vinegar, mustard, salt, pepper. Whisk in oil.
2️⃣ Cook bacon – Fry until crisp. Set aside.
3️⃣ Poach eggs – In simmering water, poach eggs 3–4 minutes.
4️⃣ Assemble salad – Toss frisée with vinaigrette and bacon.
5️⃣ Top & serve – Place a poached egg on top of each plate.
