Eid Mubarak Said! Moroccan cuisine plays a prominent role in Eid Adha celebrations, with families preparing a variety of traditional dishes. Here is a very popular Moroccan tajine that is commonly enjoyed during this festive occasion.
Lamb tajine with apricots is a variation of the traditional Moroccan dish, adding a touch of sweetness to the savory flavors. Here’s a recipe to make lamb tajine with apricots:
Ingredients:
- 1.5 kg lamb, cut into chunks
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, chopped
- 2 carrots, peeled and sliced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 cup dried apricots
- 1 tablespoon tomato paste
- 2 teaspoons ground cumin
- 2 teaspoons ground paprika
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 1/4 cup chopped fresh cilantro or parsley
- Preserved lemon slices (optional)
Instructions:
1. In a large pot or tajine dish, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened and lightly golden.
2. Add the lamb chunks to the pot and brown them on all sides.
3. Stir in the tomato paste, cumin, paprika, ginger, cinnamon, turmeric, salt, and black pepper. Cook for a few minutes to allow the spices to release their flavors.
4. Add the chopped tomatoes and enough water to cover the meat. Bring to a boil, then reduce the heat to low, cover the pot, and simmer for about 1.5 to 2 hours, or until the meat is tender.
5. Add the carrots, bell pepper, zucchini, and dried apricots to the pot. Continue to simmer for another 20-30 minutes, or until the vegetables are cooked but still slightly firm.
6. Taste and adjust the seasoning if needed.
7. Garnish with chopped cilantro or parsley, and preserved lemon slices if desired.
8. Serve the lamb tajine with apricots hot with couscous or crusty bread.
