Having filled all allocated weeks in June 2020 for our course A Taste of Provence at Chateau St Victor la Coste I am setting dates for some 3 night weekends as not everyone is able to make a whole week and we can build an interesting itinerary starting on a Thursday and leaving Sunday as Sunday seems to be a fairly inactive day in France . Please get in touch if you are interested and I can send more details but we take you to lesser known markets, art installations and places of historical interest ,. Throw in a couple of wine tours and cookery class and lots of fun . Accommodation in this wonderful 16th century Renaissance castle , all food and wine included . Wow - what's not to like !!!! Cooking for a large group can be daunting so it’s good to have a dish that can be made ahead and has the wow factor both in flavour and when it comes to the table and yet isn’t tricky or need lots of attention.
Tah- da!!!! Cauliflower and Beetroot coconut rice with turmeric ginger and coriander ticks all the boxes. Wonderful for the vegans and vegetarians amongst us and served here for my carnivorous family with barbecued pork belly and a crispy selection of sausages merguez and lamb with olives. Oh yes !

We are delighted to have completely filled next June with our course A Taste of Provence ! These will be 6 night courses with quite a detailed itinerary to show the best of what this wonderful area has to offer with the emphasis on socialisation food wine and having fun. The area and especially the Chateau are exceptionally beautiful with the local food and wine integral to this ! However for those wanting a shorter break we offer 3 night weekends- Thursday to Sunday taking in our favourite markets , a vineyard tour and a cookery collaboration and some relaxation around the pool. We take a maximum of 8 in each group and it’s a great way to meet new friends or come with existing ones ! surprisingly we still have availability at our June course A Taste of Provence starting tuesday June 18th to Sunday or Monday 24th. The course is designed to show you exactly what life in this beautiful Renaissance French Chateau is like and to get an appreciation of the wonderful area and get a taste of some of the things to do here. We take you to the best and lesser known french markets - both foodie and antique-, visits to vineyards to see production and taste the results !, visits to gorgeous honey stoned villages with amazing art installations and cook and eat together in our wonderful 16th century chateau.The weather should be blissful so there is time for sunbathing and swimming in the pool too. We have an all inclusive price - and I really mean it includes everything. Accommodation in the main chateau in individual rooms all with ensuite bathrooms, all meals- whether taken at the chateau or at local restaurants, excursions and entry to historic sites and art galleries, and all wine and aperitifs ! The nearest airports are Nimes , Marseille and Montpellier or fast train to Avignon TGV from Paris. Its 300 euros per night all inclusive and we are guaranteed to spoil you !

Yesterday we foraged for new shoots of pungent wild garlic leaves and made delicious homemade pesto with the leaves, new season first pressing olive oil, Parmesan from Courmayeur, pine nuts , walnuts and sea salt. Full of punchy flavour when stirred through fresh pasta or used to marinate boneless chicken thighs and served with the new season asparagus and a crispy green salad. Our place is green !!!

Today we returned to the Chateau and threw open the terrace doors to let the sunshine in ! Its currently 20 degrees and no wind so a perfect gardening day. We have wild hyacinths, daisies and forget-me- nots in the grass and cherry blossom leaving little pink petals as a breeze catches. Our adopted cat Chouchou is enjoying having the freedom to roam in and out as she chooses. I made a pan of wild mushroom soup with truffle oil and garlic croutons from a stale loaf of ceraine . With a large slice of Cantal and Brie de Mieux- a perfect lunch

Last night at the famous Bistrot du Paradou ! You can’t get much more classically French than this - escargots in punchy garlic butter and an historic cheese board with fig confiture and raisins soaked in cognac. They even leave a bottle of rum on the table to refresh that already very boozy rhum baba We’ve been coming to the Bistrot for the past 20 years and it’s the first place we book when we come home from travelling or , as this time, with family or a group of friends Highly recommended!!!!

During January we all want to get fit and healthy for that wonderful weather which isn't so far away ! Barely seared tuna with toasted sesame seeds on a bed of mango salad with a little homemade salsa or a vegan salad with beetroot, walnuts, cranberries , orange zest, baby spinach and rocket does the trick nicely !
