Six gorgeous places where we savoured the best of West Sweden's food:
1. is a rustic-chic retreat by the sea, with an exquisite restaurant: food is organic and local-sourced – ethically-reared chickens, grass-fed beef, foraged mushrooms and berries – and served on organic Ekelund tablecloths, woven in Sweden. Take a seat on one of the Adirondack chairs in the garden, sip champagne and enjoy the wonderful views to where the land drops down a forested ridge to a lake-like inner fjord.
2. is a hip retreat on Koster that’s upped the food game on this time-warp isle: local, organic and seasonal ingredients are cooked from scratch, over fire, in incredible ways.
3. Fine dining at .hotellet.styrso – a smart, modern retreat, which opened in August 2025 and continues the island’s old traditions: Styrsö, in the southern Gothenburg archipelago, was one of Sweden’s first spa resorts, and the Kusthotellet sits by the site of the former Coast Hospital, which was built so patients could be immersed in the island’s health-boosting conditions year-round.
4. Outdoor dining with seaweed diver and nature guide Karolina Martinson of : After harvesting various wracks and weeds, Karolina whipped up a feast of spicy sugar-kelp salad, cheese wrapped in fried gutweed and rose-hip soup with caramelised kelp.
5. Learning about Mussels at : Eating mussels farmed just offshore is good for the environment: they’re an extremely low-carbon protein source and act as natural water filters.
6. After cycling into forest at , where an excellent bike park awaits off-road riders, we were treated to a brew of camp coffee over a roaring fire followed by a magnificent chicken fajitas accompanied by a range of delicious homemade pickles and sauces. “It’s a simple thing,” said site owner Pelle Olausson, “but people love cooking outside”. Non wonder if it tastes this good.
